Can someone take the time to explain to me the pros and cons of setting up and using a picture style? Also, why would I not want to push the sharpness to the limit? Thanks for the advice.

Picture styles are programmed shortcuts that change the aperture, shutter speed, and perhaps even the ISO and auto-focus setting for particular shooting conditions. As you gain confidence with aperture, shutter speed, etc., you can ignore the shooting styles and set everything to perfection yourself. I personally keep the camera in aperture-priority mode 90% of the time.
You don't want to crank the sharpness setting to the max, because that creates a fake look. Same with the saturation. Those things might make you pictures 'pop' but in reality you lose image quality. Again, it’s a matter of personal preference, but I leave those settings on neutral or off. When I want that super-sharpened look, I do it after the fact, in Photoshop. That way, I still have a natural looking original file. (If you increase the sharpness setting in-camera, you can't UNDO it in Photoshop.)

In addition to OMG's suggestions, you can browse around the Canon site for extensive tutorials on the XTi and various picture styles. It's not really in-depth, but it gives you an idea.
