I assume all priests are Levites but not all Levites priests. In Jesus' day, what was the difference between the Chief Priests, The Pharisees, and the Scribes?

The Levites came from the tribe of Levi. They helped the priests. The priests came from Aaron's lineage.

Aaron, Moses' brother started the line of priests. He was a levite. There are 12 tribes. Naturally, Aaron associated with the other levites the most, and therefore could hand pick those he wanted as priests. They were accessable and chosen of God as well. The priest lived off offerings.

In Jesus' day...the Priests were levite decendants that were losing their direction. They were not looking for the Messiah under their noses. Just like Judas, they probably thought the Messiah was going to kick the Romans out.

The Pharisees and Sadusees were different priestly orders. What those difference are, I'm not sure.

Scribes are just people that write things down. Minutes of meetings for church records, transcribing the Torah (no printing presses as of yet).

Then there were priest for the tabernacle, to light candles, incense, verous jobs:

Luke 1:9 According to the custom of the priest's office, his lot was to burn incense when he went into the temple of the Lord.

Levi was one son of Jacob later to be called Isreal, and Levi's decendants were called the tribe of Levi and the Priests came from the tribe of Levi. So all Priests were Levites, but not all Levites were Priests.
