Vegetarian Chili
q2tsp olive oil
q1 ½ cups coarsely chopped onions
q1 cup each chopped green and red bell peper
q¾ cup each chopped celery and chopped carrots
q1tbsp minced garlic
q1 tbsp chilli powder
q1 ½ cups quartered mushrooms
q1 cup cubed zucchini
q1 can (28oz/796 ml) diced tomatoes, undrained
q1 can (19oz/ 540ml) black beans, drained and rinsed
q1 can (19oz/ 540 ml) chickpeas, drained and rinsed
q1 can kernel corn, undrained
q1 tbsp ground cumin
q1 ½ tsp each dried oregano and dried basil
q½ tsp of cayenne pepper (to taste)
qHeat olive oil in a large, non-stick pot over medium-high heat.
qAdd onions, bell pepper, celery carrots and garlic.
qCook and stir until vegs are tender, about 6 mins. Add mushrooms and zucchini and cook for 4 more mins. Add chilli powder and cook 1 more minute.
qStir in tomatoes, beans, chickpeas, corn (with liquid), cumin, oregano, basil and cayenne pepper. Bring mixture to a boil. Reduce heat to medum-low. Cover and simmer for 20 mins, stirring occasionally. Serve hot.
qMakes 8 servings (per serving: 200cals, 3g total fat, 9g protein, 38g carbs, 9.4 g fibre, 0 cholesterol, 592g sodium)

1 Saute the onions until soft along with all spices and green chilies. Add juice and simmer 15 minutes. Pour mixture in a blender and blend until smooth. When cooling in a refrigerator do not cover.
2 For jalapeno enchilada sauce : Substitute 8-12 Jalapeno peppers (canned) with tops cut off and seeds removed for the green chilli.
3 for red chilli sauce: Substitute 1/4-3/4 cup ground Red Chilli powder for the green chilli.

Throw some canned beans, tomato paste, canned tomatoes and ground meat (pork, beef, lamb) into a pot with some spices. Add hot sauce to taste.

turkey or ground beff browned and drained
can of goya red beans drained
goya black beans drained
paprika
salt
cayenne
garlic
chili powder
pepper
can of diced tomatos and jaulpeno peppers drained
can of diced tomatoes drained
can of 15oz of tomato paste
mix well together make sure not to watery at all to make it thick and mix till well heated serve over white rice or brown and with ur choice of corn bread on top or cheddar and or sour cream
