Hawaiian Chicken Salad with Pineapple
This is a big chicken salad, enough for up to 20 people. This chicken salad recipe was shared on our forum.
INGREDIENTS:
3 tablespoons curry powder
2 tablespoons soy sauce
2 cups mayonnaise
4 (3 lb) broiler chickens, cooked, meat diced
1 pound fresh seedless grapes, halved
2 cans water chestnuts, drained, sliced (8 oz each)
6 ounces sliced almonds
2 cans pineapple chunks in juice, drained (12 to 14 ounces each)

When I make chicken salad sandwiches, I buy those rotisserie chickens they sell in any supermarket. The meat is very moist and tasty. I break up all the meat, put it in a bowl, add a little salt and pepper as well as mayo (not too much), and you are finished! I usually buy little finger rolls to make small sandwiches.

CHICKEN SALAD SANDWICHES
1 c. finely chopped cooked chicken
1/4 c. finely chopped celery
2 hard cooked eggs, chopped
2 tbsp. sweet pickle relish
1/4 tsp. salt
Dash of black pepper
1/3 c. mayonnaise
3 tbsp. softened butter
Sandwich bread
Combine first 6 ingredients. Spread softened butter on bread, then spread salad mixture on bread and cut into desired shapes. Chill in covered container until ready to serve.

LuLu Lemon's recipe is the closest to mine, but I like to add a handful of raisins, too. Something about the sweet and chewy next to the spicy crunchy onions. Oh, and I use Miracle Whip instead of mayo

Chicken Sandwiches
Slice a piece of bread into two triangles(put in an oven or microwave if desired).
Mix a cooked and sliced chicken with mayonaisse, and put it in the center of those two breads, add lettuce. That's it!

1 1/2 c. cooked chicken, chopped
1 hard-cooked egg, finely chopped
1 tbsp. finely chopped onion
2 tbsp. finely chopped stuffed olives
2 tbsp. finely chopped celery
1 tbsp. pickle relish
1/8 tsp. salt
Dash of pepper
1/4 c. mayonnaise or salad dressing (sm. amt. mustard if desired)
Combine all ingredients in a bowl. Mix well. Spread between buttered slices of your favorite bread. Wrap and pack for lunches. Makes 6 sandwiches

Shredded chicken, a chopped apple, some crushed pineapple, sweet pickle relish, chopped walnuts, mayo, and whatever else you want to put into it. Be sure not to use too much mayo.

Caesar Chicken-Salad Sandwiches:
2 (4-ounce) skinned, boned chicken breast halves
1 tablespoon fresh lemon juice, divided
2 teaspoons low-sodium soy sauce
Cooking spray
3 tablespoons light mayonnaise
2 tablespoons grated Parmesan cheese
1 teaspoon Dijon mustard
1/2 teaspoon anchovy paste
1/2 teaspoon bottled minced garlic
1/8 teaspoon pepper
4 (1.2-ounce) slices whole-grain bread
2 romaine lettuce leaves
4 (1/4-inch-thick) slices tomato
Preheat broiler.
Combine chicken, 2 teaspoons lemon juice, and soy sauce in a large zip-top plastic bag; seal and marinate in refrigerator for 10 minutes, turning bag once. Remove chicken from bag. Place chicken on a broiler pan coated with cooking spray; broil 6 minutes on each side or until done. Cool; shred chicken with 2 forks.
Combine chicken, 1 teaspoon lemon juice, mayonnaise, and next 5 ingredients (mayonnaise through pepper). Spread 1 cup chicken mixture over each of 2 bread slices. Top each with 1 lettuce leaf, 2 tomato slices, and 1 bread slice. Store sandwiches in small zip-top bags in refrigerator.
Yield: 2 sandwiches

chop up chicken or put it in a chopper....then add a few chopped onions (if desired), sliced some celery, some relish, some mayo & some mustard. If you want it a little spicier, you can add either dijon or Horseradish sauce.
