Allergic reaction is cause by either diet or surroundings or something that is inbibed ingested or ingresed into the body. your body reacts bady or adversly to this "causitive" agent as has been suggested it can manifest in many ways from mild to serious to very dangerous even lethal. Bee and wasp stings can cause an allergic reaction called anaphalasia or anaphalactic shock. This is a severe reaction that may result in death unless help is given very quicky. It can be that pronounced or it could be as simple as a sneeze or rash. In the milder cases antihystamines will help (hayfever pills). You can also be cured of this possibly by a process known as desensitisation. where you are exposed to minute amounts of the irritant until your body produces its own defence. Always seek medical advice on this or any other medical problem. As i said some allergic reations can damage health severely, and some may result in death.

An allergy, aka "anaphylaxis," is a sudden, severe, potentially fatal, systemic reaction that can involve various areas of the body (such as the skin, respiratory tract, gastrointestinal tract, and cardiovascular system).
An allergic reaction may begin with a tingling sensation, itching, or metallic taste in the mouth. Other symptoms can include hives, a sensation of warmth, asthma symptoms, swelling of the mouth and throat area, difficulty breathing, vomiting, diarrhea, cramping, a drop in blood pressure, and loss of consciousness. These symptoms may begin in as little as five to 15 minutes to up to two hours after exposure to the allergen, but life-threatening reactions may progress over hours.
Some individuals have a reaction, and the symptoms go away only to return two to three hours later. This is called a "biphasic reaction." Often the symptoms occur in the respiratory tract and take the individual by surprise.

It means that your body is over reacting to histamines - I believe they are a protein? That's why allergy pills usually work - they block the receptors in your immune system from accepting the histamines.

in a nutshell, your body encounters an outside stimulus - pollen, animal hair, certain types of food, and "overreacts" to the stimulus - throat swells up, rashes, sneezing, etc.
