I want to make quickbread in an empty yam can. I saw it in Martha Stewart Dec 2004 issue -- I remember it saying something about lined cans. But I can't remember whether it said to use a lined can or NOT to use a lined can. Does anyone know, or do you have the issue to check? THANKS!

A Tuna Fish can can be used for baking as Tuna Fish is baked in the can that it comes in. Other cans now have a white liner, don't know what that is so I wouldn't bake in it.

Don't know if this'll help, but these are instructions to the recipe I have for Boston Brown Bread - which is cooked in a coffee can:

Grease 1-pound coffee can; line bottom with waxed paper. Pour batter into prepared can; cover with foil and tie with string. Place can on rack in deep saucepan; add boiling water to reach halfway up side of can. Cover saucepan. Over low heat, simmer 1 1/2 to 2 hours until toothpick inserted in center comes out clean. Remove from can immediately; cool on wire rack.
(TIP: Release bread from can by opening bottom of can. Cut bread while warm with thread.)

tuna fish is not baked but put through a pressure cooker. If you lined the can it would not hurt, if its not the metal lining may bleed into the bread. I would line.

You know, I just don't believe everything Martha Stewart says.
The only one who believes she is omnipotent is herself.

I would not cook in a tin can--lined or unlined.

Unlined. I have often used coffee cans to bake bread.

You spray them with butter flavor Crisco spray and then flour them.

no you do not have to line your can.Another good bread is boston baked bread and this is also baked in cans.
