I think helicopters have a collective control that controls the speed and "bite," or angle, of the main blades, whereas the cyclic controls the whole blade assembly for maneuvering, though I could be wrong. Please correct me and clarify any misunderstanding on my part, and please tell me what the motorcycle like control (the rotating handle on at least some collectives) does, and any other control information you can give.

OK, you're more and less in the right way; the rotating knob at the end of collective pitch control is the throttle which controls the engine RPM (not in turbine engines); the collective controls the pitch or angle of main rotor blades TOGETHER (collective) and the cyclic pitch controls the cyclic pitch angle of each blade through the swashplate assembly.
As you move the stick forward, the push-pull rods moves the swashplate in such position that the blade moving FWD increases its angle and the blade moving AFT decreases it.
The additional control is the torque/antitorque control (the pedals) which increase or decrease the angle of tail rotor TOGETHER.

Yes the collective control increases or decreases the angle of the blades all at one time (collectively).

The cyclic control moves the whole rotor disc, but it does is by changing each blade's pitch as it goes around. (Ex: all the blades are at high pitch on one side of the disc and low pitch on the other). Due to gyroscopic precession, the blades must be moved 90 degrees prior to get the desired effect. (So it you wanted to tilt the disc forward, the aft-moving blades increase in pitch and vice-versa).

The twist grip is the throttle. On piston helicopters it controls manifold pressure since RPM is constant.

On turbine helicopters it only has three positions: cutoff (for shutdown), idle, and flight. Turbine engines are all governed and increase power automatically (although there is a 'beeper' on the collective that changes the max RPM of the turbine).
