This is the best and is simple. I have cooked championship chili in cook offs and this is still the one I cook at home.
Chili
1 pound of ground beef
1 chopped onion
1 chopped green pepper
2 – 8 ounce cans of tomato sauce
1 Teaspoon of salt
1 16 ounce can of kidney beans
1 Teaspoon of chili powder
Sauté onion and green pepper with ground beef until beef is browned. Spoon off excess fat and stir in tomato sauce. Cook over low heat 5 minutes. Add kidney beans and salt, heating through. Stir in chili powder to taste. Serve with crackers or with corn chips.

Amish Chili
6 servings 1 hour 30 min prep
1 lb ground beef
1/2 cup chopped onions
1/2 cup chopped celery
3 tablespoons flour
1/4 cup brown sugar
1/4 cup ketchup
4 cups tomato juice
2-3 tablespoons chili powder
16 ounces kidney beans
salt and pepper (very little salt is needed)
Brown ground beef, onions and celery, then drain excess fat.
Add flour and heat through, stirring constantly.
Add all remaining ingredients and mix well.
Cover and simmer 30 minutes.

Really Simple Chili
1-1/2 lbs.ground beef

2 cloves garlic,minced
1-15 oz.can diced tomatoes
2-10-3/4 oz.tomato soup,plus 1 can water
1 or 2 cans kidney or pinto beans,or both
2 tablespoons chili powder
1 teaspoon cumin
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper(optional)
1 teaspoon sugar
Saute onions in a small amount of vegetable oil until soft;add garlic and ground beef,cook until meat is browned.Drain if desired.Add the rest of the ingredients and simmer for 45 minutes-1 hour.You may need to add more or less water,and you can spice it up as desired.This is a mild chili,and is great for kids.

I make a wonderful chili that my hubbies friends buy by the quart. It is fast, easy, and tasty. You will need to buy spices though, and they can be costly, but remember, spices keep for ages, and stretch well for the money.
1 lb. ground beef
1 can tomatoes and green chilies or 1 can rotel
1 can kidney beans-lite or dark (drained)
1 small onion diced
1 Cup Ketchup
1 Cup Water
1 tsp. salt
1 tsp. Chili Powder
1 tsp. Pepper
2 tsp. Ground Cumin
1 tsp. Curry Powder
Brown ground beef, drain the fat, and put meat aside. In the same pot add 1 Tbsp. oil, heat on med-hi heat. Add diced onion and cook for 3 minutes, stirring so it doesnt burn or stick to pan. Add all of remaining ingrediants, i ncluding the meat. Simmer on low heat for 30 minutes. Thats it.........serve with shredded chedder cheese on top if you like.

This is a little different: no soaking beans or simmering forever...
"Chili Soup" - 6 servings
1/2 lb. ground beef
1 medium onion; chopped
1 clove garlic; minced
1 (16 oz.) can pinto or kidney beans
1 (16 oz.) can tomatoes; chopped
2 cups water
2 tsp. chili powder
1/2 tsp. salt
1/4 tsp. ground cumin
1/8 tsp. pepper
1 bay leaf
1) In 4-quart saucepan over medium-high heat, cook ground beef, onion and garlic until meat is browned and onion is tender, stirring to break up meat. Pour off fat.
2) Stir in remaining ingredients; heat to boiling. Reduce heat to low; cover and simmer 15 minutes or until flavors are blended. Discard bay leaf. Yields 7 cups.

ingredients:

procedures:
Heat oil in large skillet; add garlic, onion and ground beef.
Stir until browned.
Pour off excess fat.
Add beans with liquid, tomato sauce, salt and chili powder.
Simmer over low heat stirring occasionally, until chili is desired thickness.

wow, i so had plans to make chili tommorow!
i use 1-2 lbs ground chuck, brown and drain, drain a can each of black beans, dark red kidney beans and navy beans, a can of chili beans- dont drain those! you will need one large can of tomato puree or sauce, and a large can diced tomatos, and some chili powder, put all the meat and cans in large crock pot on hi, until bubling, with a fair amount of chili powder, i mean like almost a whole small jar. salt ad peper to taste, put crock pot on low when it comes to a bubble, and keep it covered, you can keep this pretty much all day, and its even better the next day. my mom dosent use the black beans but i found they are really good in her chili recipie- the one i just told you!

All-American Chili:
6 ounces hot turkey Italian sausage
2 cups chopped onion
1 cup chopped green bell pepper
8 garlic cloves, minced
1 pound ground sirloin
1 jalapeño pepper, chopped
2 tablespoons chili powder
2 tablespoons brown sugar
1 tablespoon ground cumin
3 tablespoons tomato paste
1 teaspoon dried oregano
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
2 bay leaves
1 1/4 cups Merlot or other fruity red wine
2 (28-ounce) cans whole tomatoes, undrained and coarsely chopped
2 (15-ounce) cans kidney beans, drained
1/2 cup (2 ounces) shredded reduced-fat sharp cheddar cheese
Heat a large Dutch oven over medium-high heat. Remove casings from sausage. Add sausage, onion, and the next 4 ingredients (onion through jalapeño) to pan; cook 8 minutes or until sausage and beef are browned, stirring to crumble.
Add chili powder and the next 7 ingredients (chili powder through bay leaves), and cook for 1 minute, stirring constantly. Stir in wine, tomatoes, and kidney beans; bring to a boil. Cover, reduce heat, and simmer 1 hour, stirring occasionally.
Uncover and cook for 30 minutes, stirring occasionally. Discard the bay leaves. Sprinkle each serving with cheddar cheese.
Note: Like most chilis, this version tastes even better the next day.
Yield: 8 servings (serving size: 1 1/4 cups chili and 1 tablespoon cheese)

At your local grocery store there is a package called "2 Alarm Chili". All you have to add is hamburger meat, tomato sauce and water. All the spices are in the package, individually packaged. You can add beans if you like the beans in your chili. Very simple and very good.
