The sulfur compounds contained in onion and garlic are responsible for producing bad breath.
This is the explanation how it is:
Bad breath termed as "Halitosis" is caused by the build-up of Volatile Sulphur Compounds (VSC's) coming from the breakdown of bacteria, tissue, and food particles.
Garlic and onions when eaten and digested produce metabolites compounds which are transmitted from the blood through the lungs. The lungs absorb and excrete the compound which are exhaled for up to 24 hours. In other words, the odor-causing sulfur chemicals that give onion and garlic their distinctive odors are digested and the digested products go into the bloodstream. The blood is brought back to the lungs to get fresh oxygen, so you breathe in and out the onion breath or garlic breath.
Since the bi-products from ingested onion and garlic are absorbed, carried through the blood and excreted through the lungs, garlic or onion breath remain long after eating them even after thorough mouth cleaning.
One product which is said to work well to control this type of bad breath is Breathasure. It is made of parsley and sunflower seed oil in a gel cap which prevent the odor causing by-products of these foods from entering the blood stream.☺

Basically, a part of the garlic can't be fully digested by us, so its lingers around our system...Onions are in the same family as garlic, so same applies...
