I´m staying in another country with another family for a year. I usually have to make my own luch and dinner, and have run out of ideas. I am a student and on a budget, and don´t like to eat too much meat, but all ideas are welcome. I need something fast, cheap, healthy and tasty. Help, before I have to eat liquid yogurt for the rest of my life!

1.)Mack and cheese-Prepare your cheese sauce with any cheeses you prefer, some butter, and a little to milk to thin it out. Stir over low-medium heat. Pour over cooked macaroni.

I like to use at least 3 different cheeses. American and cheddar... then a little parmasean so i don't have to add salt.

2.)Grill cheese with ham-Obtain a frying pan of correct size for the number of sandwiches you can handle at a time.

Put pan on stove over medium heat until hot. During heating, begin slicing cheese and getting bread.

Butter pan, or bread, whichever you prefer, and put one side of sandwich on pan with cheese on top. Then add the top slice of bread right away. Lower the heat and cover to help the cheese melt.

Check to see if bread is brown after no more than two minutes, although more time may be needed for desired results. When bread is brown enough, butter pan again and flip.

Know that the second side should brown faster so be prepared to check it in no time. When it is cooked to your satisfaction, turn off the stove, put your sandwich on a plate, and enjoy!

When you say fresh are you saying he's raw foods only? If so: Make a stunning little fruit salad. Just grab a half dozen random fruits and throw some nuts in. If not: get wheat tortillas, sautee some veggies, cook some black beans (or kidney beans, rinsed) to tenderness with cumin and paprika, throw it all together in a wrap and mm. nummies.

I eat a lot of salads. I buy pre-mixed salad greens at the store and toss them with dried cranberries, slivered almonds and toasted seeds (all from a bulk food store). I also add a little bit of crumbled feta cheese. Then I use a simple salad dressing (olive oil, balsamic and lemon juice) or store-bought raspberry vinagrette. Serve with fresh bread.

I also make stir-fries from different veggies (often broccoli, cauliflower and carrots) and tofu. Then I serve it on top of brown rice.

I leave out the sweetener and sometimes use cider vinegar instead of rice vinegar. You can use cilantro instead of the green onions, or just omit them altogether for simplicity's sake.

Other ideas:

pasta + tomato sauce + olives

rice + canned beans (can be cooked together in one pot) + fresh chopped onion and tomato to garnish

rice + steamed/microwaved/boiled veggies (frozen are fine) + chopped cashews

baked potato + chili or salsa and black beans, stirred together and heated

hummus and tomato sandwich, with any other veggies or herbs you might have on hand

Take cooked cauliflower, put a tomato spaghetti sauce over it add some mozzarella and bake it in the oven....really suprisingly yummy.
