Here's my ideas:
1. A Gift Card
2. A Thank you card
3. An karate ornament, like an ornament of a martial artist
4. A mug with mini bag of starbucks coffee beans in it.
That's it. Hope this helps! Good Luck!

Depending on what you and yours want to spend. I suggest going to UFC.com.
My favorite gift for fighters is the first 13 UFC tournaments in a DVD set.
You did not explain your discipline.
Many, many, many people here disagree with me. If he is interested in the current state of affairs he may like it.
If he is not a fighter but an Artist, I am sorry I can not help.

a gift certificate to a nice Chinese or Japanese restuarant? any book on the history of the particular martial arts he practices? also a book on the history of the country where the maritial art had its birth? a photo of your class, if your in one, with all the students signatures? the same can be done with a wall mounting,, stretch cotton fabric across a large picture frame base, let his students write a note in permanent marker or paint,, then frame it
