MILK-CHOCOLATE BAVARIAN CREAM
1/2 c. sugar
1 env. unflavored gelatin
1/4 tsp. salt
2 1/4 c. milk
4 egg yolks, slightly beaten
1 c. (6 oz.) milk-chocolate pieces (reserve a few for decoration)
1 c. heavy cream
1 tsp. vanilla extract
Sweetened whipped cream for decoration
Blend sugar, gelatin, salt, milk, egg yolks and milk-chocolate pieces well in top of a double boiler. Cook over simmering water, stirring constantly until mixture thickens and chocolate pieces are completely melted and blended into the mixture. Chill until the mixture mounds slightly when dropped from a spoon. Whip the cream and vanilla together until stiff. Fold whipped cream into the chocolate mixture. Spoon into an oiled 4 cup mold. Chill several hours or overnight before serving. Decorate with sweetened whipped cream and reserved chocolate pieces. Makes 6 servings.

Chocolate Bavarian Cream Pie
1 1/2 C Chocolate Wafer Cookies -- crushed
1/2 C Butter -- melted
1 Tbsp Gelatin
1/4 C Cold Water
3 Egg Yolks -- slightly beaten
1/2 C Sugar
1/4 Tsp Salt
1 C Milk -- scalded
3 Egg Whites -- stiffly beaten
1 C Whipping Cream -- whipped
Mix crushed wafers and butter together and pat into a buttered 8 x
11-inch cake pan. Chill.
Soften gelatin in cold water and set aside. In top of double boiler
combine eg yolks, sugar, salt, and milk. Add custard to gelatin mixture
and cool. Fold stiffly beaten egg whites, whipped cream, and vanilla
into gelatin-custard mixture. Pour into crust. May be garnished with
additional cookie crumbs. Chill for several hours before serving.

Easy Bavarian Cream
Fold 3 stiffly beaten, pasteurized egg whites into a bowl of prepared, cooled instant sugar-free/fat-free vanilla, butterscotch, white chocolate, banana or chocolate pudding. Chill for 2 hours in individual custard cups or one large serving bowl. Now you're on the way to the elegant dishes below.

Recipe: Chocolate Bavarian Cream

1 pk (12-oz) Nestle Toll House
-- semi-sweet chocolate
-- morsels
1/2 c Milk
1 Envelope unflavored gelatin
1 tb Water
2 Eggs; separated
2 tb Brandy (optional)
1/8 ts Salt
1/4 c Sugar; divided
2 c Heavy cream; divided
Line 1-1/2 quart bowl with plastic wrap; set aside. In small heavy gauge saucepan, combine Nestle Toll House semi-sweet chocolate morsels and milk. Stir over low heat until morsels are melted and mixture is smooth. Remove from heat. In cup, sprinkle gelatin over water; set aside 5 minutes. In 1-1/2 quart bowl, beat egg yolks. Stir in 1/4 cup chocolate mixture; return to saucepan. Cook over low heat, stirring constantly, until slightly thickened. Add softened gelatin; stir until dissolved. Remove from heat. Stir in brandy, if desired. Transfer to large bowl; cool to room temperature. In 1-1/2 quart bowl, beat egg whites and salt until foamy. Gradually add 2 tablespoons sugar; beat until stiff peaks form. Fold into cooled chocolate mixture. In medium bowl, beat 1 cup heavy cream until stiff; fold into chocolate mixture. Pour into prepared bowl. Chill until firm. Unmold onto serving platter; remove plastic wrap. In medium bowl, combine remaining 1 cup heavy cream and remaining 2 tablespoons sugar; beat until stiff. Fill pastry bag fitted with rosette tip; decorate mold. Makes 10-12 servings.
