whats a muffin recipe without eggs?(no mayo please)

I often add yoghurt instead of eggs to my muffin recipes and they work out just fine. Here's one that I'm making now (house starting to smell yummy!!):

Banana chocolate chip muffins

Combine all dry ingredients in a medium bowl:
1 1/2 c flour
1 tsp baking powder
1 tsp baking soda

In a separate bowl, combine wet ingredients:
3 medium bananas, mashed
3/4 c sugar (I use splenda to save calories)
1 beaten egg (I substitute 1/4 c plain low-fat yoghurt)
1/2 c melted butter or margarine

Combine wet and dry ingredients. Mix until just combined (don't overmix -- whatever you do!). Mix in 3/4 c chocolate chips.

Make in muffin tins in a 375 degree oven for 20 minutes.

muffin with mayo? that sounds nasty.
Try replacing eggs with egg substitutes (they are safe for vegans,cheap and available in any grocery store) or with low fat yogurt if you're not a vegan. You need some protein to thicken the muffins up. I think Emeril on the Food network made good egg-free muffins. Try looking it up on www.foodnetwork.com
