The trick is to make a ganache:
12 oz of your favorite chocolate
3/4 cup heavy cream
2 Tbsp unsalted butter

Break up chocolate and heat slowly on stove top, preferably a double boiler. When melted, slowly stir in butter and cream. You can also add flavoring to taste, like a sweet liquor.

Once this is done it will stay smooth, creamy and yummy over the relatively low heat of the fondue pot.

Sure - just use chocolate candy grade chocolate, the fountain will keep it mixing while you dip. I do this all the time with mine so my kids can help and not get burned by the pan. Have Fun!
