Cream Cheese Icing

Do not consider skipping the sifting of the powdered sugar or you will have unattractive white lumps in your icing.

2 3-ounce packages cream cheese, room temperature
1/2 cup unsalted butter, room temperature
1/2 teaspoon pure vanilla extract
1/4 teaspoon pure almond extract
2 1/2 cups sifted powdered sugar
Remaining coconut

In a mixing bowl, beat together the cream cheese, butter, vanilla extract and almond extract until light and fluffy. Gradually beat in 1 1/2 cups of the powdered sugar, beating well. Gradually beat in as much of the remaining sugar as needed to reach a comfortable spreading consistency.

the more powdered sugar you add the stiffer your icing will get
1) 8 oz. brick of cream cheese
2) 1/4 stick or 4 tablespoons of butter
3) 3 to 7 cups of powdered sugar
Beat cream cheese and butter until fluffy and then add powdered sugar until it is the consistency that you need it to be. If you add too much sugar you can thin it with some milk. If you will be adding food coloring keep it a bit stiffer than you want it because the coloring will thin it some.
enjoy!

A package of cream cheese, a stick of butter, room temperature. Add about 4 cups of powdered sugar. 1 teaspoon of vanilla. Mix, preferably with a mixer. If it's too thick add a little milk, if it's too thin add a little more powdered sugar.
