I have recipes for both . . . and both are very, very good.
Personally, I like a good buttermilk pancake if it's really fluffy because I am a complete fool for maple syrup.
However, if I've got fresh fruit? Waffles. Especially if I have heavy whipping cream so I can make homemade whipped cream (only very lightly sweetened with a touch of vanilla for flavour).
I'm going to put down a third option then go look for my pan for Sunday morning breakfast: Aebleskiver. Imagine a waffly-pancake in a bite-sized ball with cinnamon on it. You can get some awful aebleskiver out there, but mine are really good. I even cheat and add tart apple chunks and cinnamon to the batter.

Belgium Waffles
Pecan, walnut or Macadamia Nut
2 egg yolks
1/2 t. salt
2 C. milk
1/3 C. oil
2 C. flour
2 egg whites, stiffly beaten
1 T. baking powder
Cooking Instructions:
Preheat waffle maker. Put all ingredients, except egg whites, in a large mixer bowl. Beat on low until moistened. Increase to medium, mix until smooth. By hand, gently fold in beaten egg whites. Pour 1/2 cup (125 ml) batter over grids. Close waffle maker, bake until steam no longer escapes, about 3-5 minutes. Repeat. Serve while hot with your favorite topping. Sprinkle 1 T. finely chopped nuts over preheated waffle grids. Pour 1/2 C. batter over nuts and close waffle maker. Bake as directed.

I love pancakes. They are softer, can be rolled and easier to make and more tasty. You just need any old pan. Who wants to buy a waffle machine, only to use it once? Even the frozen ones aren't tasty!
