I am cooking a meal tomorrow for a friend,I am looking for a low fat recipe,I am serving pasta with seafood.Does anyone have any ideas about a low fat light sauce I could serve with it please.x

Chop and onion and a clove of Garlic.

1Fry in a little olive oil, until soft and golden yellow
2 See Options
3 Add Fresh chopped Tomatoes or (Tinned tomatoes)
4 Add a few basilicum leaves, and tea spoon Tomatoe puree. Salt and pepper to taste. and simmer.

Options You can also add Mushrooms, Red Green peppers, Zuchini,. at stage 2

Tomato sauce
Ingredients
1 tbsp olive oil
1 medium onion, finely chopped
3 cloves garlic, finely chopped
2x400g/14oz tins chopped tomatoes
1 tbsp caster sugar
1½ tbsp red wine vinegar
30g/1oz butter
1 sprig of basil leaves, torn
salt and freshly ground black pepper
parmesan, grated



Method
1. Sweat the onion and garlic in the olive oil. Cook without colouring until the onions are translucent.
2. Add the sugar and red wine vinegar and reduce until sticky.
3. Pour in the chopped tomatoes and simmer for 15 minutes.
4. Season with a pinch of salt and a grind of black pepper. If the sauce is too thick add a little water. If the sauce is too liquid leave it on the heat for a few more minutes to reduce.
5. Taste and check the seasoning. Stir in the butter and basil just before serving. Pour over your favourite pasta and top with lots of freshly grated parmesan.

most fresh tomato sauces require no fat whatsoever.
Try mixing two large cans of tomato product ( for instance, one crushed, one diced, or one whole, etc) plus herbs (oregano, basil, etc) and cooked onions, garlic, salt, pepper, hot peppers, etc and cook for an hour or so. Mushrooms are nice in this, as are chopped green peppers. No fat required.
A dash of olive oil over the pasta first will be nice and olive oil is not bad for you like so many other fats are.

tomatoe sauces always go well with seafood to give that mediterranean flavour. one or two tins of chopped tomatoes..blended, two large cloves of garlic...blended or mashed.... pitted black olives finely chopped...a few drops of tobasco and some fish stock..just a little as you don't want it to be too thin. dice up some different coloured peppers very small and fry with just a smidge of olive oil...add to sauce..et voila....enjoy. if too thin..a teaspoon full of cornflour in a cup add a little water to mix.....boil sauce..and slowly add cornflour mix stirring all the while and it will thicken up nicely.

tinned tomatoes with garlic, onions, tomatoe puree, italian herbs and salt/ black pepper to taste. goes well with tuna fish.

no fat in the sauce - got it from a rosemary conelly recipe book

have a tomato base sauce with fresh basil roughly chopped and added at last minute,with some chillis and chopped black olives,its called arrabiata,oh and also garlic.

Tinned tomatoes! - great sauce - just let it reduce a little to thicken it up.
