THE BEST peanut butter cookie recipe in the whole world! Surprisingly wonderful.

But they are addicting, so be careful!

1 Cup Butter
1 Cup Creamy peanut butter
1 Cup white sugar
1 Cup packed brown sugar
1 Teaspoon vanilla extract
3 Eggs
4 Cups all-purpose flour
2 Teaspoons baking soda
1/4 Teaspoon salt

Filling:
1/2 Cup creamy peanut butter
3 Cups confectioners' sugar
1 Teaspoon vanilla extract
5-6 Tablespoons milk

In a mixing bowl, cream butter, peanut butter and sugars. Add vanilla. Add eggs one at a time beating well after each addition. Mix flour, baking soda and salt in a separate bowl. Add to mixture in mixing bowl. Shape into 1 inch balls and place 2 inches apart on ungreased baking sheets. Flatten with tins of a fork. Bake at 375 degrees for 5-6 minutes (important so that you don't over bake!!). Remove from oven and leave on cookie sheet for 2-3 minutes to allow the cookies to continue absorbing the heat from the cookie sheet. They should be slightly brown on the bottom. Cool on wire racks. In a mixing bowl combine and mix the filling ingredients until smooth. Spread on half of the cookies and top each with another cookie. Yield 5 dozen.

Ingredients
125 g/ 4 1/2 oz butter, softened
150 g/ 5 1/2 oz chunky peanut butter

225 g/ 8 oz granulated suguar
1 egg, beaten
150g/ 5 1/2 oz plain flour
1/2 tsp baking powder
pinch of salt
75 g/ 2 3/4 oz unsalted natural peanuts, chopped

Directions
* Lightly grease 2 baking trays or cookie sheets.
* In a large mixing bowl, beat the butter and peanut butter.
* Gradually add the sugar and egg and mix well.
* Add the egg a little at a time to prevent curdelling
* Sieve the flour, baking powder and salt into the peanut butter mixture.
* Add the peanuts and bring all of the ingredients together to form a soft dough. Wrap and leave to chill for half an hour.
* Form the dough into 20 small balls and place them on to the prepared baking trays about 5 cm apart. Flatten slightly with your hand and ensure that no 2 cookies are touching. For crunchy biscuits, sprinkle some sugar on the top of each.
* Bake in a hot oven Gas mark 5 for 15 minutes until golden. After baking leave to cool on a wire rack.

I make these every year for Christmas and there are none left by the time every body is gone. So if I want any of them, I have to "hide" some for myself.

Peanut Butter Cookies

1/2 cup butter
1/2 cup peanut butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1/2 teaspoon vanilla
1 1/4 cups sifted all-purpose flour
3/4 teaspoon soda
1/4 teaspoon salt

Thoroughly cream butter, peanut butter, sugars, egg, and vanilla. Sift together dry ingredients; blend into creamed mixture. Shape in 1-inch balls; roll in sugar. Place 2 inches apart on ungreased cookie sheet. Crisscross with fork tines or put pecan halves in center of each. Bake at 375 for 10-12 minutes. Cool slightly; remove from pan. Makes 4 dozen.

This is for a light chewy Peanut Butter Cookie
Very Easy to Make-

Peanut Butter Kisses
2 egg whites
1/8 t. Cream of Tarter
2/3 Cup sugar
1/2 Cup of Peanut Butter

In a small bowl mix egg whites & cream of tarter on high until soft peak forms when the beater is raised. Slowly add you sugar
one tablespoon at a time. Lightly fold in peanut butter just until mixed. Drop rounded teaspoon portions on to a greased cookie sheet. Pre-heated oven 300 degrees for 25 minutes or so until lightly browned. Remove from baking sheet right away. Once cooled they can be stored in a zip lock bag. Makes about 3 dozen

PEANUT BUTTER COOKIES - good and easy

1/2 c. shortening or butter
1/2 c. brown sugar, packed
1/2 c. sugar
1/2 c. peanut butter, creamy or chunky
1 egg
1 tsp. vanilla extract
1 1/2 c. flour
1 tsp. baking soda
Pinch of salt

Cream together shortening, sugars, and peanut butter. Add egg and vanilla; mix well. Add flour, soda, and salt. Drop by spoonfuls on ungreased cookie sheets and flatten with a fork dipped in water. Bake at 375 degrees for 10-12 minutes.

Peanut Butter Cookies

3/4 c Margarine or butter, softened (1 1/2 sticks)
2/3 c Plus 3 tb granulated sugar divided
2/3 c Firmly packed brown sugar
2/3 c Peanut butter
1 Egg
1 ts Vanilla
1 2/3 c All-purpose flour
1/2 ts Baking soda

Instructions

Combine margarine, 2/3 cup granulated sugar and brown sugar in a mixing bowl; beat until creamy. Stir in peanut butter, egg and vanilla; mixing until well-combined. Stir in flour and baking soda; mix well. Shape dough into 1-inch balls, then roll in 3 to 4 tb sugar, coating thoroughly. Place 2 inches apart on ungreased baking sheets. Bake in a 350-degree oven for 10 to 12 minutes or until golden brown. Remove from baking sheets; make crosshatch marks with fork; cool on wire racks.

Chocolate and Peanut Butter Cookies:

1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/4 cup butter, softened
2 tablespoons creamy peanut butter
1 1/2 teaspoons vanilla extract
1 large egg white
3/4 cup regular oats
1/2 cup raisins
1/2 cup semisweet chocolate chips
Cooking spray

Preheat oven to 350°.

Lightly spoon all-purpose flour into a dry measuring cup, and level with a knife. Combine flour and 1/2 teaspoon baking powder in a small bowl, stirring well with a whisk. Place the granulated sugar, brown sugar, butter, peanut butter, vanilla extract, and egg white in a large bowl; beat with a mixer at medium speed until well blended (about 2 minutes). Add flour mixture, 3/4 cup oats, 1/2 cup raisins, and 1/2 cup chocolate chips, stirring until ingredients are well combined. Cover and freeze cookie dough for 10 minutes.

Divide cookie dough into 30 equal portions, shaping each one into a ball. Place the dough balls 2 inches apart on baking sheets coated with cooking spray, and flatten dough balls with the bottom of a glass. Bake the dough balls at 350° for 15 minutes. Remove the cookies from pans, and cool completely on wire racks.

Yield: 30 cookies (serving size: 1 cookie)

PEANUT BUTTER NO BAKE COOKIES

1/2 cup corn syrup
1/2 cup sugar
1/4 cup butter
1/2 peanut butter
3 1/2 cups Rice Krispies

Cook corn syrup, sugar, and butter in a saucepan over medium heat until mixture comes to a boil, stirring often.
Remove from heat and stir in the peanut butter until melted.

Stir in Rice Krispies and drop them by the spoonful onto a cookie sheet sprayed with Pam.

Refrigerate until firm.

Peanut Butter Cookies

Mix all ingredients, roll dough into 1 inch balls, place on a baking sheet. Bake at 350 degrees for 10 minutes. Allow cookies to cool for 5 minutes before removing to cooling rack.
