This tradition of saying " Bless You " after you sneeze originated in Germany I believe. It was started because it was discovered that all human are at their most vulnerableness when they sneezed so that would be the easiest time for the devil to enter you so people started saying Bless You to keep the devil out. They actually say God Bless You.
It is not really true that the devil can enter you but that is how this all originated.
Once I learned this I stopped saying it , just because it made me feel uncomfortable.

thanks, i needed that...
(the blessing that is)
or
thanks, i hope this sneezing isn't going to continue, i about sneezed my brains out. (you know, on those really harsh sneezes--i wasn't inferring anything about the size of your brain)
HAVE A MERRY CHRISTMAS and
.......GOD BLESS YOU...
ps.
one of the answers was giving a little history about saying "God Bless You", so another theory of how it started is that people thought evil spirits were leaving your body, and since the evil spirits left you, God had blessed you.

Thank you, or danke.
I find it funny that the French don't have this custom. When you sneeze, they don't say anything.

I was taught to say "thank you" after someone blessed me or gesundheit after my sneeze. It's just common courtesy.

Thank you is the correct response.
I no longer say anything when someone sneezes.
I do not wish to be "blessed" so I don't assume others do either...

bless you and Gesundheit were said because it was belived that your heart stopped for a second when you sneezed and it was said because you didnt die from it. a proper response is thank you. or for Gesundheit, wich is German a proper response would be Danke.

Just a simple "Thank You" will suffice. It's the most appropriate reply.

Most atheists are touchy as hell, and they are insidious, having infiltrated our social fabric like mildew rot.
Better let anything short of a heart attack go unremarked.
(Oops! -- See Clarkie's response to demonstrate my point. LOLOLOL)
