Who has it? Honestly, I love Progresso lentil soup and have tried tons of recipes but haven't found anything as good. I'd like to continue my search, but maybe with some input from the good people of Y!A instead of stabbing out blindly at whatever looks decent. I'm vegetarian, by the way, so no ham hocks or sausage.

P.S. If you're going to answer with "buy the canned stuff" then please don't bother. Thanks.

Okay. Saute 4-5 chopped garlic cloves and 1 chooped onion in olive oil until the onion is light brown.
Add water salt and pepper and lentils.
Get some pataks Curry paste. Usually in specialty food section of your grocery. Add about 3-5 tablespoons depending on taste if you do not like curry well ignore this answer. And this is the secret add about 3-5 tablespoons of natural unsweetened real chunky peanut butter cook about one hour this recipe can be modified pataks curry comes in a couple of heat levels. Do Not use curry powder.

Rinse the beans and pick over looking for stones.
Cover with water and leave to soak overnight.
Saute 1 diced small onion, 1 diced carrot, 1 stalk celery diced in 3 Tablespoons olive oil. Saute until soft. Add lentils after you have drained the water and rinsed them again. cook for a minute or 2 and then add canned chicken stock or broth, ( I make my own) Add enough to cover beans. add 1 bay leaf, a pinch of dried thyme, and 1/2 can crushed tomatoes. about 1 1/2 cups. season with salt and pepper and cook until lentils are soft. About 1 hour. to this you may add some cook small pasta, but I think this is what you are looking for. This recipe is using a 1 pound bag of lentils.

1 bag lentils
Water
1 large onion, chopped
3 carrots, sliced
2-4 cloves garlic, minced
1/4 tsp pepper
2 Tbsp parsley
2 cans diced tomatoes
Red wine vinegar

Wash lentils and place in pot with water to cover about 1" over the top. Add onion, carrot, garlic, pepper and parsley. Mix well. Cook, covered, for one hour. Add tomatoes and a large amount of vinegar (I don't measure this, I just shake and shake until I think it's enough, but I can tell you it's a lot. If I don't add enough, it's kind of bland and dh won't eat it.). Cook for 30 more minutes. Serve with thick, crusty bread and a salad.

Of course, you can add celery, but I hate it, so I don't. I never use salt to cook with, but if you like it, add it at the beginning--I don't know how much, whatever you like. Enjoy!

2 cups green lentils
1 head garlic, peeled and finely minced or pressed
2 med. onions finely chopped
1 1/2 T olive oil
1/2 bunch celery chopped into 1/2 inch pieces
4-5 carrots sliced into 1/2 inch pieces
4 medium potatoes cut into 1 inch cubes
8 to 10 cups water or stock
2 bay leafs (remove before serving)
1 T finely chopped parsley
1 tsp. thyme
1 tsp. oregano
salt and pepper to taste

Vegetable Options
zucchini
corn
peas
asparagus
mushrooms
bell peppers
green beans
tomatoes







1. Sauté onions and garlic in olive oil over medium heat for about five minutes or until soft.
2. Add onions and garlic to stock pot with water or stock.
3. Add remaining ingredients and simmer, stirring occassionally for at least 1 hour.

Like most soups of this type, this one will taste even better the second day when the flavors have had a chance to develop

Crockpot Lentils
2 c dried lentils, sorted and rinsed
2 onions, chopped
3 c chopped carrots
2 (10 oz.) cans condensed chicken broth
4 c water

Combine all ingredients in crockpot, mix to combine. Cover crockpot, cook low 7-9 hours.

All fruits are fruit and vegetables. A "vegetable" is a plant, any part of which can be used for food.
