As this country (UK) is supposed to be so concerned with the environment there should be a category devoted especially to that subject. It could cover questions on wildlife (very important), green issues, farming, and general questions about the countryside. Which category do I post this under?

All those things that you mention are surely included in "Environment & Ecology".

I don't think there are enough questions here on the environment to justify it.
Environment & Ecology is pretty much the same thing as environment like moustaches and beards or slugs and snails. There is a difference but really most answers would fit both.

Environment and ecology go together. Limit the title = limit the discussion and free flow of ideas on the subject.
