yes! Born and raised Pennsylvania Dutch.......We love them!

For RINOBUCK....here is an easy one..worth a try....The amish know how to make them!!
INGREDIENTS
8 eggs
2 (15 ounce) cans whole pickled beets, juice reserved
1 onion, chopped
1 cup white sugar
3/4 cup cider vinegar
1/2 teaspoon salt
1 pinch ground black pepper
2 bay leaves
12 whole cloves
DIRECTIONS
Place eggs in saucepan and cover with water. Bring to boil. Cover, remove from heat, and let eggs sit in hot water for 10 to 12 minutes. Remove from hot water, cool, and peel.
Place beets, onion, and peeled eggs in a non-reactive glass or plastic container. Set aside.
In a medium-size, non-reactive saucepan, combine sugar, 1 cup reserved beet juice, vinegar, salt, pepper, bay leaves, and cloves. Bring to a boil, lower heat, and simmer 5 minutes.
Pour hot liquid over beets and eggs. Cover, and refrigerate 48 hours before using.

Pickled eggs are fantastic and a simple way to make them is buy pickled beets and onions and eat them as a side dish. Keep the liquid. Hardboil a dozen or so eggs and peel when cooled and stuff into the jar of beet/onion pickle juice liquid. The eggs will turn a beautiful Easter purple color and be great for eating in a few days. The longer they pickle the deeper the color penetrates into the egg itself.

The only pickled food I like is pickles. Would rather eat Deviled Eggs.

My god yes, pickled pigs-feet too. But I've tried a million recipes for pickled eggs and I can't find a good one. Everyone always swears this is the one but they are not even close ..helpppppppppppppppp

I actually copy and pasted Jessified's recipe. I lived in Western Pa. for several years. This I believe, would be the authentic stuff. I know I could only remember the pickled beet juice, so I am looking forward to using her recipe.

Yes I do like pickled eggs, but not too often.
I also like boiled, poached, fried eggs, with different types of seasonings too, esp. deviled eggs....
I also like eggs in casserole dishes, or baked goods....
If suddenly our world was devastated & all we had left to survive on was the chicken &/or the egg? I'd keep the chicken alive & eat eggs eggs galore, with salt & pepper & more.
Do I like them raw? Never tried, but would be willing if push came to shove.
Yes I do indeed like EGGS, pickled or not!

I do!
12 Eggs
1 tablespoon Salt
2 cups White vinegar
1 cup Cold water
1 tablespoon Mixed whole spices (in garni bag)
Put eggs and salt in cold water and bring to the boil. Turn off heat and let stand for five minutes. Drain. Place eggs in cold water and peel. Let eggs stand until cold. Mix together the remaining ingredients.

Let boil and then cool. Make sure eggs and vinegar are cold before putting in jars. Leave 24 hours before eating .
