Frozen Lobster Tails
6 oz=9 minutes
8 oz=12 minutes
10 oz=15 minutes
Thawed Lobster Tails
6 oz=6 minutes
8 oz=8 minutes
10 oz=10 minutes
Bring water to boil, add 1 tsp salt.
Add tails, bring to boil again and cook as shown above.
Remove from heat and drench with cold water.

Make sure the tails is thawed, most are frozen. Cut an incision lengthwise across the top of the tail. Reach in and lift out the meat. Try not to cut through the meat to far. While leaving the bottom part of the tail attached to the shell, lay the meat on top of the shell. It will lay out draped over the top like you see in photos or are served in a restaurant. season with salt and pepper, and top with melted butter. Place on tray in hot 475 degree oven until brown. The meat will be cook when it is firm to the touch.
You can use the oven broiler but omit the butter until the tail is cooked as the butter will burn under extreme conditions. If you use this method, brush butter on cooked tail meat this will give a nice shiny appearance.

Since I live on the west coast of California, and my backyard is the Pacific Ocean, I have tried many ways to cook crustaceans (lobster, shrimp, crab) and the best way for me at least, is to steam them.....that way they don't loose their delicate flavor which I think boiling takes a lot away......Now, if you have the whole lobster alive, by all means boil it for no more than 8-10 minutes for about a 1.5 pound lobster.......And don't forget the melted butter and lemon to go with it!!!! Enjoy!!
BTW, what time is dinner????

The popular way is boiling the whole lobster. If doing just tails I split them horizontally and put them under the broiler until the meat falls away from the sides.

Roasted Lobster Tails with Ginger Dipping Sauce:
Sauce:
3/4 teaspoon dry mustard
1/2 teaspoon water
3 tablespoons low-sodium soy sauce
1 tablespoon plum sauce
1 tablespoon dry sherry
3/4 teaspoon minced peeled fresh ginger
Lobster:
2 (8-ounce) frozen lobster tails, thawed
Cooking spray
1 teaspoon vegetable oil
1/4 teaspoon dark sesame oil
1/4 teaspoon black pepper
Sliced green onions (optional)
Preheat oven to 425°.
To prepare sauce, combine mustard and water in a small bowl; stir well with a whisk. Stir in soy sauce, plum sauce, sherry, and ginger; set aside.
To prepare lobster, make a lengthwise cut through the top of each lobster shell using kitchen shears, cutting to, but not through, lobster meat; press shell open. Place the lobster tails, cut sides up, in a shallow roasting pan coated with cooking spray. Combine the oils and pepper, and spoon over the lobster meat.
Bake at 425° for 13 minutes or until the lobster meat turns opaque. Serve lobster with sauce, and garnish with onions, if desired.
Yield: 2 servings (serving size: 1 lobster tail and 2 tablespoons dipping sauce)
