1-3/4 cups HONEY MAID Graham Cracker Crumbs
1/3 cup margarine or butter, melted
1-1/4 cups sugar, divided
3 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 cup BREAK STONE'S or KNUDSEN Sour Cream
2 tsp. vanilla
3 eggs
1 can (21 oz.) cherry pie filling
PREHEAT oven to 350°F if using a silver 8- or 9-inch spring form pan (or to 325°F if using a dark nonstick 8- or 9-inch spring form pan). Mix graham cracker crumbs, margarine and 1/4 cup of the sugar. Press firmly onto bottom and 2-1/2 inches up side of pan; set aside.
BEAT cream cheese and the remaining 1 cup sugar in large bowl with electric mixer on medium speed until well blended. Add sour cream and vanilla; mix well. Add eggs, one at a time, beating on low speed after each addition just until blended. Pour into crust.
BAKE 1 hour to 1 hour 10 min. or until center is almost set. Turn oven off. Open oven door slightly. Let cheesecake set in oven 1 hour. Remove cheesecake from oven; cool completely. Refrigerate at least 4 hours or overnight. Loosen cheesecake from rim of pan; remove rim. Top cheesecake with pie filling just before serving. Store leftover cheesecake in refrigerator.

Makes: 10 servings
2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 pkg. (4 oz.) BAKER'S GERMAN'S Sweet Chocolate, melted, cooled
1/3 cup sugar
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
1 HONEY MAID Graham Pie Crust (6 oz.)
1 can (20 oz.) cherry pie filling
BEAT cream cheese, chocolate and sugar in large bowl with electric mixer on medium speed until well blended. Gently stir in whipped topping.
SPOON into crust.
REFRIGERATE 3 hours or overnight. Top with pie filling just before serving. Store leftover cheesecake in refrigerator.

1 (21 oz.) can cherry pie filling; chilled
In large mixer bowl, beat cream cheese until fluffy; gradually beat in condensed milk until smooth. Stir in lemon juice and vanilla; pour into prepared crust. Chill 3 hours or until set. Top with desired amount of pie filling before serving. Refrigerate leftovers.

PHILADELPHIA BRAND CHEESECAKE

1 tsp. grated lemon rind
1/2 tsp. vanilla
2 eggs, separated
1 can Cherry Pie Filling
Combine crumbs and butter; press onto bottom of 9 inch springform pan. Bake at 325 degrees for 10 minutes. Combine cream cheese, sugar, juice, rind and vanilla, mixing at medium speed on electric mixer until well blended. Add egg yolks, one at a time, mixing well after each addition. Fold in stiffly beaten egg whites; pour over crust. Bake at 300 degrees for 45 minutes. Serve with cherry pie filling.
