I am saying hi back to her and she has pointed me out to friends. Is she interested and what should I do next?

ask her out for lunch or a cup of coffee, maybe there is something there for you, at least doing something like lunch or? is not threatening and afterwords if it doesn't click you can part more easily. Have fun!

Take a chance! Next time you run into her, spark up a conversation. If you think she's interesting enough, ask her to go get a cup of coffee or something. What's the worst that could happen, right?

Keep talking to her, don't make your move until she has made it apparent that she is looking for a relationship. I've come to find that relationships are better when you start out friends, so you know who you're dealing with.
