Whole milk might give you a problem. But I accidentially used skim milk that was 6 months out of date and nothing happened. I used it to make soup and could not tell the difference. My friend was keeping it to make a culture out of and didn't label the bottle as do not use.... I also believe in live and let live; so I say go for it. Do your own thing.
