To get the timing exactly right, you really need a meat thermometer. It depends on the cut and size of the meat, and how rare you want it. Here is an article that will help you figure it out, though:

Here's an easy recipe that is _delicious_, and you get some leeway on the cooking time because it's in a bag.

Get one of those plastic roast-it-in-bag bags, like Reynolds. Put the roast in the bag, pour a can of Campbell's Cream of Mushroom or Golden Cream of Mushroom soup on top, and roast it according to the article above.

Make mashed potatoes to go with it because the gravy is _delicious_. Don't feel compelled to tell anyone it's a Campbell's Soup recipe, because the flavor from the beef turns it into something really special. You can also cut up three or four carrots into 2-inch pieces, and a couple of potatoes into 2-inch cubes, and include them in the bag at the beginning. You wouldn't believe how fast those carrots will fly off everyone's plates!

Good luck!

This is the same concept as a crock pot. Set your oven to 200. Mix a can of condensed cream of mushroom soup and 1 pkg of onion soup mix together. Slather over your roast that you have placed in your roasting pan lined with sliced potatoes and even carrots if you like. Let the roast go all day in the oven. I have don this many times before. If I put the roast in at 8 in the morning it is perfect by 5 or 6 pm.

I usually make everything from scratch, but I found this to be a very quick and easy recipe using store bought items.
1 pot roast
pepper
2 cans cream of mushroom soup
1 can cream of celery soup
1 envelope Lipton onion soup mix
1 TBS Worcestershire sauce
1/4 cup vinegar
preheat oven to 375
place roast on a piece of foil large enough to wrap it
place in roasting pan
pepper the roast
mix all other ingredients together and pour over the roast
seal the roast in the foil
bake 1/2 hour per pound
I hope this helps !!!

First of all, forget the oven. Cook it in a crock pot or slow cooker on low all day long(6-8 hours). Put roast in pot. Add seasoning. I like meat tenderizer and oregano. Add 1 chopped onion. Add a little beef boullion( a cube or 2). Cover with water, put the lid on, and leave it alone. You can add vegetables if you like after about 4 hours of cooking. The main thing is just leave it alone as much as possible. It will be fall apart tender and it is almost impossible to burn or overcook in a crock pot.

Burgundy Pot Roast of Beef with vegetables

5 to 6 pounds rolled boneless or bone-in beef chuck
All-purpose flour
Fat from chuck
1 cup Burgundy or red wine
Salt and pepper
1 minced garlic glove
1 crumbled bay leaf

2 cups sliced carrots
2 cups sliced celery
2 cups yellow turnups
1 cup chopped onion

Dust meat lightly with flour. Brown slowly on all sides in hot fat in Dutch oven. Transfer to ovenproof casserole pan if handles and cover of browning pan aren't ovenproof. Add wine, salt and pepper, garlic, and bay leaf. Bake, covered, in preheated moderate oven (350 F) for 2 hours. Turn over meat and add vegetables and cook for another hour or until meat is very tender. Serve vegetables and unthickened liquid as sauce on sliced meat. Makes 10 to 12 servings.

Slow cook all your meats in the oven for the best result.

I'd go with 325 for about 30 minutes per pound.
