Mine was called 'Joseph'. Male turkeys are called 'stags'.
The Yanks call them toms and gobblers but since this is a united kingdon answer board, I am telling you the correct name in the United Kingdom is a 'stag'.

In the UK a male turkey is always called a stag. I had a pet stag once and he was quite a character, and he used to chase the dogs. We called him Fred and he lived to a ripe old age. Wish I could insert a lovely picture of him.
