Just call her on Sunday. Sometimes if we like you, we are dying to talk to you and anticipate your call. So she may just text you herself. Then you will have a place to start from.
Otherwise, keep her in suspense until Sunday.

Is she a little young? Texting is fine and dandy. Because of teenagers, there doesn't seem to be much etiquette on anything, particularly that. If you want to, you can. Just drop her a simple line. "Can't wait to see you monday". And leave it at that. Don't get dragged into too much of it. And if she's constantly texting you then something is wrong and she's either 1) desperate, 2) needy, 3) or clingy.
You might want to reconsider the relationship if that is the case. She may need to feel a constant connection to you. I've seen plenty of young girls constantly text a guy and get highly upset if he didn't respond right away or as often as she did. I'd be careful with this one. I'm in my later 20s and I text, but in a very reserved fashion. Not 10 million times a day. Once every few days. Or if something important comes up. If you don't like it, don't do. Don't let anyone make you do something you don't like. Call her, spend a few minutes talking to her like you want to and plan to meet her Monday.

I understand the issues of texting. Not only is it hard to type everything back and forth, but some things that are said in texts, can be taken in multiple ways....it causes confusion at times.
Simply, I would call her and explain your dilema. Tell her you'll text her, or answer her texts, but you'd really rather speak to her when possible. This will let her know that you're interested, and willing to try new things..even if you don't care for it.
The nice thing about texting is that you can do it when it's convenient, you don't have to say much (alot of phones limit the message to 100 or 160 characters), and it's simple to let her know you're thinking about her without having a 15 minute conversation.
Try to look at the positive side of it...

You don't have to text if you don't want to. When you call her tell her how you feel about the whole text situation and say you'd rather talk to her!

stick to being your own person, if you don't want to text her, tell her you much rather have phone calls, and she should not mind, after all, whats she wants to do, show all her friends all who is texting her, nah, not a good idea

Be honest, just text her asking if she fancies a chat? My ex-boyf was rubbish at texting - he'd just text "talk?", then ring me. I never had a problem with it.
