Fried Pecan Pies
1 cup firmly packed light brown sugar
1 tablespoon flour
3 lightly beaten eggs
1 cup light corn syrup
4 tablespoons butter
1 cup chopped toasted pecans
2 cups self-rising flour
1/4 cup oil
1/2 cup milk
Oil for frying
In a heavy saucepan, combine the brown sugar and the tablespoon of flour. Mix well. Add eggs, corn syrup and butter. Bring to a boil. Reduce heat to medium-low and cook, stirring continuously, until mixture has thickened. This will probably take about 6 to 8 minutes. Stir in the toasted pecans. Refrigerate until cool. This can be made ahead and used as needed.
Combine self-rising flour, oil and milk in food processor. Process until mixture forms a ball. Turn out onto floured surface and knead until slightly firmer than biscuit dough. Divide into six portions. Roll each portion to a ball about 2 inches in diameter. Using a floured rolling pin, roll each ball to a circle about 5 to 6 inches in diameter. Dough should be thin. Place about 1/4 cup of the filling in center of each circle. Fold to form a half-moon shape. Press edges with a fork to seal well. Gently push fork into top and bottom of each pie 3 or 4 times. This will prevent the crust from being doughy on the inside.
Pour oil into electric skillet to a depth of about 3/4 inch. Heat to 375 degrees. Place the pies, 2 or 3 at a time, into hot oil and fry until golden brown, turning as needed.
Drain well on paper towels. Allow to cool slightly before serving. Makes 6 pies.

I've made something like this before but wasn't sure of what to call it. If you have a pecan pie filling receipe, you can follow it but use only 1/2 cup kero syrup and more pecans to make it ticker. Us only the yolks of the 2 eggs called for in the receipe. Save the whites for the rest of the receipe. Set aside. Make a dough with bisquick, 1cup bisquick, 1/2 cup of half and half, and 1 tsp. good pure vanilla. Stir together and set aside. Beat the 2 egg whites until stiff, like for meringue and add 2 TBS. sugar and beat well. Fold into the bisquick mixture. Using a kitchen tablespoon, or small scoope, drop one tbs. of filling into the egg white mixture and roll around until well coated. Have ready, in a large pan, hot oil about 350 degrees. Drop coated filling into hot oil and fry until golden brown. Drain on a paper bag, and coat with powder sugar. Can be served warm or cold. Hope this will help you. It's the best I could come up with.

Just make the pecan pie recipe on the back of the corn syrup bottle. Make your favorite cobbler crust and bake it on top.

I've never heard of a cobbler with just pecans....I even searched online before I answered and can't find anything :( Good luck though.

Ingredients
3 cup corn syrup 3 cup granulated sugar 1/3 cup melted butter or margarine 1 tablespoon vanilla extract 6 eggs 3 cup pecans, coarsely chopped 1 crust (recipe follows) Crust: 1 cup oat flour 1 cup unbleached flour 1/2 cup butter or margarine 1/4 teaspoon salt 1/2 cup cold water Mix together flours and salt. Cut in butter or margarine with fork or pastry cutter. Stir in cold water with fork. Form into ball. On lightly floured surface, roll out into a 13 x 9-inch rectangle.
Directions
Preheat oven to 350 degrees. Spray a 9x13-inch baking dish with cooking spray. Mix together syrup, sugar, butter or margarine, vanilla extract and eggs. Pour 1/3 of mixture into pan. Lay crust on top. Stir nuts into remaining mixture. Pour on top of crust. Bake 50 to 60 minutes, or until center is nearly set.
