I am making a pecan pie that calls for egg yolks in the cooked filling using the egg whites for a meringue. I would prefer to use the whole egg if possible and not make the meringue. Would I just cut down on the amount of eggs used?

The whites will change the texture of the pie making it more pudding like. You could set the whites aside and use them for breakfast instead of making meringue - they make a lovely healthy omelet. Good Luck!

Answer KT follow the recipe. Separate the whites from yolks. Yolks can not be like egg whites whipped until fluffy. Separate egg whites from yolks Whip the whites (meringue) until light and fluffy. If you want whipped cream frosting rather than meringue, then make whipped cream in replce of meringue .

I use whole eggs in my pecan pies. Just hunt down a recipe that does so. Remember though that it may not have a meringue topping. Mine didn't.

You should follow the recipe just leaving off the meringue.
I f you use the egg whites in the filliing it will change the texture and the taste of the filling.
