I know that Nero has an Encoder Programm that takes quality away from the credits and so on so the movie will fit on a DVD. Is there any other program, maybe even free, that does the same thing. I only want to take quality from the menu, credits....and not the movie.

Use DVDShrink to make backups...it's works beautifully! If you have Nero installed (even the trial), DVDShrink will burn the DVD for you too!

If they are already on DVD, rather that copy the files off and then back on to a new DVD, use the "disk copy" function to simple make a copy of the DVD without removing the files. (You did say these were you're own DVDs, so not commercial ones).
