Ingredients:

3 Tbs. Oil (or sausage grease)
3 Tbs. Flour
2-3 cups milk
Salt
Pepper
1/2 Lb Suasage


Brown sausage, set aside. Heat oil or susage grease on medium heat. Add flour and stir constantly for about 3-4 minutes until all flour is cooked. (you may have to add more oil if flour is too thick). While stirring with a whisk, pour in one cup of milk. Simmer and stir till it thickens. Continue adding small amounts of milk until you get the consistency you want. Add sausage to pan. Salt and pepper to taste.

I never make my white gravy from scratch for biscuits. I love the sausage and gravy packet from the store. But I use 2 cups of milk/cream instead of half water. Sometimes I put some real crumbled sausage in with it. (Fried of course).

And for the biscuits, dunk them in butter before baking. They are so good for a semi-homemade dish.

BISCUITS AND SAUSAGE GRAVY

8 Buttermilk biscuits
3/4 pound of sausage (fatty sausage works best for this)
4 cups of milk
4-6 tablespoons of flour

Brown sausage in skillet. As soon as sausage is completely brown, turn to medium heat. Add flour by the tablespoon, stirring constantly. Let the flour turn BROWN before adding another tablespoon (if you don't, your gravy will taste like flour). After you have added enough flour to mske the gravy as thick as you like, add milk and stir with whisk.
Serve over biscuits.

White Gravy:
1/2 cup vegetable oil or bacon grease
1/2 to 3/4 cup flour
1 tsp. rubbed sage
1/2 tsp. salt
1 tsp. pepper
1/2 gal. milk

Gravy Variations:
1 lb. cooked and crumbled ground beef or 1 lb. cooked and crumbled ground sausage or 1 jar dried beef or cooked and crumbled bacon or browned chopped bologna or diced cooked chicken or diced cooked turkey or hard boiled eggs, sliced

Directions:
Heat oil in deep skillet. Stir in enough flour to make a thick paste (I use a wooden spoon). Add milk quickly. Cook over low heat, stirring constantly. Stirring is necessary to avoid lumping. If lumps do form you can remove them with a slotted spoon. Stir constantly, being careful to cover entire skillet until gravy thickens to the desired consistency.
Season at any time during the cooking providing you don't stop stirring.

4 frozen BOCA Meatless Breakfast Patties
1 pkg. (2.64 oz.) low-fat country gravy mix
2 cups water
4 whole wheat English muffins, split, toasted



MICROWAVE patties as directed on pkg.
MEANWHILE, prepare gravy mix with water in medium saucepan as directed on pkg. Chop patties. Add to gravy; mix well.
PLACE 2 muffin halves on each plate; top with about 1/2 cup of the gravy mixture.

umm try using the jar stuff they make great thick gravy
