A lot of people are starting to use donut or cup cake "trees" instead of a wedding cake or just having a dessert table. I mean think about it you could bake the cup cakes yourself or get someone else in the family to do that. Also it shouldn't cost that much to get donuts from Krispy Kreme or Dunkin Donuts. But cupcakes are more used than donuts. Here are some pics of ideas:

Rent a plaster tiered cake as a center piece and then have a wide assortment of different flavor cakes that can be sliced in the kitchen and brought out already on small plates for the guests to choose a favorite flavor. Cakes can be baked cheaply at home several days ahead of time. Then rent a soft-serve ice cream machine so guests can top their slice with a yummy swirl.

I realize that this seems like a really big deal right now, but let me assure you that people aren't going to notice the dessert that much. If you do a cake, they're going to say "Oh, look at the cake." If you do a chocolate fountain, they're going to say "Oh, look at the chocolate fountain." Do whatever you like, and don't worry about it being completely creative or different. Spend your time on the more important things.

A popular trend is a cupcake cake. Allow at least 1 cupcake per guest and then stack them on tiers of platters or trays. Its pretty affordable and can be done in a very stylish way to provide the same impact as a traditional wedding cake at a fraction of the cost.

Depending on what season your wedding is in, you could have a strawberry tree or use other fruits/vegetables like apples, pinnapples, or a combination of them (try to make is a "bigger" fruit/veggie though or you would have to buy a lot and it could get very pricey) and offer guests different options for dipping.
It works the same way a cupcake/donut tree does, except it adds a more healthier option, and sweets would be on the side for those who want them. If you are having a bigger guest list I would make a few small trees and have tubs of each dipping option next to each one, so that people don't have to stand in line for an hour. :)

I would do a candy bar. All different kinds of sweets for the guests to take as they want. You could also add fruit to this.
Plus, you can make the groom's cake something other than cake. I would personally choose cheesecake.

Make your own sundae table...
Candy Buffet table- you just have tons of different candy choice and give people empty bags to fill out for their own choice of favors.
I am personally a drinker- I love the candy martini's and the chocolate martini's- YUM
That would be great dessert at a wedding.

Had a friend who had several different cheesecakes instead of wedding cake. Her aunt made them in different flavors, and they arranged them on platforms with the flowers and stuff around , really pretty and different.

How about displaying some pictures of the two of you in some picture frames and place them around the cake table and the area where you have your guest book
If you have a lap top you can make a slide show of your pictures you can show pictures of you and your future husband growing up and then the two of you together
You can make sugar cookies and use white iccing or try to match the icing to your colors and put the sparkle sprinkles on

Why not try serving some kind of cold and fruity soup with the cake? I once attended a wedding that served a small bowl of "cherry soup" with their wedding cake, and it was delicious! Fun, too, because they had a cherry or two on the side of each bowl.
