Wouldn't take her to the movie theater... instead rent some "chick flicks" and watch at home, by the fire, prepare some good snacks, etc... a sensitive woman would appreciate that.

The first thing I would do is ask her what types of movies she likes. Then I would ask her if there was any movies that she would want to see. That would be the best way. She might have a clue that you want to take her to the movies but if she is the kind of woman I believe her to be then she will definitely be touched and she will show her appreciation.

I'm a sensitive woman, so....hmmm. It depends on how long you've been dating. If it's early in the relationship, I'd take her out to see a comedy. Sensitive women like to laugh, but hate to be laughed at. Don't take her to see something that might overexpose her sensitivity, like a tear jerker. She probably doesn't want you to think badly of her for crying all over the place, so I'd stick with something light hearted and funny. A funny holiday movie or something.

When in doubt, ask what movie she'd like to see, or before the movie ask her what kind of movie's she likes. That will help make choosing easier.
