i am trying to cook a nice little dinner for have my bf but have no idea what i should do! i want something simple yet flavor-ful and looks like it took me forever! i am a college student and on a budget and i am open to an ideas, recipes and so forth! thanks

oh yeah, he likes the homemade stuff his mom makes as well as mexican food, pasta, chicken cooked different ways, a salad on the side, that sort of stuff. he hates lots of veggies!

You could call his mom & ask for his favorite dish/recipe, or work the question into a conversation w him (so it will be a surprise.)Since he's not a big veggie fan, I would go for a steak (doesn't have to be the most expensive cut), smothered in onions and mushrooms, baked or mashed potatoes, simple green salad w cherry tomatoes, red onions, mushrooms, croutons, dressing of choice (bleu?, ranch?), and a storebought dessert (less time consuming) and wine -- Two Buck Chuck is inexpensive, if you have a Trader Joe's around. Have a lovely dinner..

This has a little mexican flavor but it is something simple
Taco Pie
1 lb. Ground beef
taco seasoning mix
1/2 C. water
1-2 C. crushed corn chips (fritos or Doritos tastes good also)
1 C. sour cream
taco sauce
8 oz. crescent dinner rolls
1C. cheddar cheese
chopped tomatoes
shredded lettuce
Brown and drain ground beef add seasoning mix and water and simmer. Form crust with dinner rolls in pie plate. Sprinkle crushed corn chips on top. Add meat and top with sour cream. Cover with cheese. Bake 20-25 minutes at 375 degrees. Top with lettuce and tomatoes and serve with taco sauce.

Or a chicken fajata pizza
1 tablespoon olive oil
2 chicken breasts boneless, skinless, cut in strips
1 1/2 teaspoons chili powder
3/4 teaspoon salt
1/2 teaspoon garlic powder
1 cup onions thinly sliced
1 cup red bell peppers (or green), cut in strips
10 ounces refrigerated pizza crust
1/2 cup salsa
8 ounces monterey jack cheese shredded

Heat the oil in a large skillet over medium-high heat until hot. Add the chicken; cook and stir 5 minutes or until lightly browned. Stir in chili powder, salt and garlic powder. Add onions and bell pepper; cook and stir an additional 1 minute or until vegetables are crisp-tender. Heat oven to 425F degrees. Grease a 12-inch pizza pan . Unroll dough; place in prepared pan. Bake at 425 degrees for 6 to 8 minutes or until lightly browned. Spoon chicken mixture over crust. Top with salsa and sprinkle with cheese. Bake 14 to 18 minutes or until crust is golden and cheese is melted.

This one is great and easy. For veggie accompaniment, do something simple like fresh, steamed green beans with a tiny bit of butter and salt and a leaf lettuce salad. *tip*- if you have time and funds, do it once just for yourself and / or a girlfriend first. Good Luck!

Garlic Chicken Kiev

Amount Measure Ingredient -- Preparation Method

3 tablespoons reduced-fat margarine -- softened
1 tablespoon snipped fresh chives or parsley
1/8 teaspoon garlic powder
6 small skinless boneless chicken breast halves (about 3 pounds)
2 cups corn flakes -- crushed (about 1 cup)
2 tablespoons chopped fresh parsley
1/2 teaspoon paprika
1/4 cup buttermilk
OR
1/4 cup skim milk

Mix margarine, chives and garlic powder; shape into rectangle, 3 × 2 inches. Cover and freeze until firm, about 30 minutes. Remove excess fat from chicken; flatten each chicken breast half to 1/4-inch thickness between waxed paper or plastic wrap.

Heat oven to 425º. Cut margarine mixture crosswise into 6 pieces. Place 1 piece on center of each chicken breast. Fold long sides over margarine; fold up ends and secure with wooden pick. Mix corn flakes, parsley and paprika. Dip chicken into buttermilk; lightly and evenly coat with corn flake mixture. Place chicken breasts, seam sides down, in square pan, 9 × 9 × 2 inches, sprayed with nonstick cooking spray. Bake uncovered until chicken is done, about 35 minutes.

Microwave Directions: Prepare chicken as directed. Arrange coated chicken breasts, seam sides down, on microwavable rack in microwavable dish. Microwave uncovered on High 4 minutes; rotate dish 1/2 turn. Microwave until chicken is done, 4 to 6 minutes longer. Let stand uncovered 5 minutes.

FYI: I've never done it in the micro... can't vouch for that one.

Girlfriend chicken with a salad

two to four chicken breasts or thighs boneless skinless
one can of cream of mushroom
one can of cheese soup or another cream of something soup
one can full of rice
one can of milk or broth
baking dish

place mix one cup of rice with one can of soup and milk. Place rice mix in bottom of baking dish. Place chicken on top and cover chicken with one can or undiluted soup. Cover with foil and bake at 350 F for 1/2 hour uncover and bake until rice tender, about another 1/2 hour.
Serve with a prepackaged mixed spring mix salad and garnish greens with Mandarin oranges and slivered almonds
Diner should cost less that twenty bucks

I have a zillion recipes that are quick, easy, delicious and they look, taste and seem gourmet. I'd like a little more idea on what your looking for; chicken, fish, beef, pasta; but this is one idea. Email me for others.

Chiles Rellenos Chicken

2 boneless, skinless chicken breasts
1 lime, cut in half crosswise
1 egg white
1 garlic clove, pressed
½ cup finely crushed nacho cheese flavored tortilla chips (about 1 ½ cup chips)
½ can (4 oz) whole green chiles, drained and cut into strips
2 Tbsp shredded Monterey Jack cheese
1 tsp snipped fresh cilantro
Prepared salsa (optional)

1.Preheat oven to 400 degrees. Spray small bar pan with nonstick cooking spray. Rinse chicken and pat dry with paper towels. Place one chicken breast half in resealable plastic food storage bag; seal bag. Lightly flatten chicken to even thickness using Meat Tenderizer. Repeat with remaining chicken breast half.
2.Juice lime halves into small batter bowl using Citrus Press. Add egg white and garlic pressed with Garlic Press.; whisk until frothy using Stainless Whisk.
3.Place Tortilla chips in another resealable food storage bag and finely crush using the flat side of the Meat Tenderizer. Place crushed chips in a shallow dish. Dip chicken in the egg mixture and then into chips coating completely. Discard remaining chips. Place chicken on pan.
4.Bake 20-22 minutes ir until chicken is no longer pink and juices run clear. Arrange chile strips over chicken; sprinkle with cheese. Bake 2-3 or just until cheese melts. Remove from oven. Sprinkle with cilantro. Serve with salsa, if desired.

Yield: 2 servings

Nutrients per serving: Calories 530, Total Fat 22g, Saturated Fat 5g, Cholesterol 75mg, Carbohydrate 48g, Protein 36g, Sodium 700mg, Fiber 4g

Diabetic exchanges per serving: 3 starch, 4 medium-fat meat (3 carb)

The ingredients in this recipe can easily be doubled and baked on the Medium Bar Pan.
The Citrus Press makes juicing limes a quick and easy task. Simply slice a lime in half crosswise, place into the hopper of the press and squeeze.
Traditional chiles rellenos start with mild pablano peppers that are stuffed with Chihuahua cheese, then dipped in an egg batter or breaded and fried.


Great when served with a spanish rice, or a garlic mashed potato and some green veggies.

I think speghetti is a great idea. It meets your criteria but can be made into something elegant with wine and french bread - a store brought cheesecake on the side.
But one suggestions - admit that you don't know how to do this. No lies for anything - that's the best way to start. God Bless!

Baked Fish with some vegetables, a salad, dinner rolls, and his favorite dessert is a really nice dinner and it's really easy to made.

better like concrete than lumpy.2 of Sand and one among Cement and that i have not had any courtroom cases, even no matter if it really is purely too a lot for them to take and there is amazingly some left over
