CORIANDER CHICKEN
2 tbsp chopped coriander
2 tbsp light soy sauce
1 lemon, zest and juice
1 tsp caster sugar
4 (225 g / 8 oz each) skinless, boneless chicken fillets
225 g (8 oz) basmati rice
TO SERVE:
1 tbsp chopped parsley
lemon wedges and rind to garnish
In a non-metallic dish mix together the coriander, soy sauce, lemon juice and zest, and caster sugar. Coat the chicken in the marinade and leave for 15 minutes.
Meanwhile, rinse the rice and place in a saucepan. Cover with enough water to come 2.5cm (1 inch) above the level of the rice. Season and simmer covered for 15 minutes.
As the rice is cooking, grill the chicken for 20 minutes, turning occasionally.
TO SERVE:
Fold the parsley into the cooked rice and serve with the chicken and pan fried courgettes. Garnish with lemon wedges and rind.
Makes 4 servings
OR
Coriander chicken
Ingredients:
5 tbsp of freshly chopped coriander
4 chicken breasts, boneless, skinless and diced
1 lime, squeezed for lime juice
1 tbsp of fish sauce
1 tbsp of sesame oil
3 garlic cloves, grated
1 tsp of soy sauce
1 tsp of brown sugar
Directions:
Sautee the garlic in the sesame oil over a low heat. Add 3 tbsp of coriander and simmer for 2 minutes.
Add 3 more tbsp of coriander, the fish sauce and chicken, the soy sauce and sugar and simmer everything for 5 minutes.
Squeeze a lime over the chicken and simmer for 2 minutes.
Serve with white rice.
Serves: 4 persons

Quick Coriander Chicken Breasts
4 boneless, skinless chicken breasts halves
3 tablespoons light soy sauce
1 tablespoon coriander seeds, crushed
1 tablespoon red wine vinegar
1 teaspoon brown sugar
2 cloves garlic, minced
1/4 teaspoon poultry seasoning
1/2 teaspoon coarsely ground pepper
1 tablespoon olive oil
Place soy sauce, crushed coriander seeds, vinegar, brown sugar, garlic and poultry seasoning in food processor container and process 1 minute.
Place chicken breasts in shallow bowl; pour sauce over chicken and turn to coat well. Sprinkle with pepper.
In frypan, place olive oil and heat to medium temperature. Add chicken and cook, turning, about 7 minutes per side or until fork can be inserted with ease. Pour any remaining sauce over chicken after first turning.
Makes 6 servings.

its very simple,
chicken boneless 500kgs
coriender leaves 1 bunch(nice thick one)
green chilles 5-6(according to taste)
coconut 1/2
lime juoce 1tsb
jeeera 1tsp
cashew nuts 10 to 15
ginger garlic 2tsb
grind all this to a smooth paste
than in oil cook this paste for few mins till the raw smell goes off.
than add chicken and cook till done.
when u need water just add little or else it will go runny.
this is how i cook at home and everybody loves it.
serve with naan bread or hot rice.
i am sure you will like it.

chicken with double amount of coriander cut finely, three cloves garlic for every piece of chiken and 2 large cups of yoghurt. marinade with salt and above ingredients and cook in oven gas mark 9 for 40 minutes. bobs your uncle and fannys your aunt.
