If you believe you have been unfairly evaluated go to HER boss. But you can not say its because she is crazy. Have real reasons and real evidence.

Either change to a different elective or learn to deal with it, in the real world there are all kinds of people, crazy, mean, stupid, and you have to be able to deal with all kinds of people. I work with a very nice teacher who has no discipline in her classroom, and every day when I'm in her class I sing an old disco song in mind, "I Will Survive". That's my way of coping.

Get yourself a coach who will sit down with you and diagnose the problem with you and help you to come up with a solution.
