When you toast that turkey use the pan drippings to create your own gravy like oyu wold do with a regular turkey or, you can buy a prepared chicken stock gravy or broth to either supplement this or to lighten up the smoke flavor that will come through in the gravy.

First you don't want to "Mask" the flavor of the smoked bird, just make a "light" turkey gravy, light meaning very little salt, the smoke have given you that already

Turkey or brown gravy. I'd base the gravy with chicken stock.

oooh...I just had an idea...smoked turkey gravy...just put the bird in a pan after it comes out of the smoker and use the drippings/juice from it to make smoked turkey gravy as you would the drippings from any meat to make gravy...heh..

for thanksgiving i bought turkey wings & covered them with water added onion,garlic, sage, thyme, rosemary, carrots & boiled for about 2 hours then strain all the ingredients so you have very tasty clear broth,,,,,then just thinken it up with a rue
