INGREDIENTS
1 quart vegetable oil for frying
4 cups shrimp, peeled and deveined
1 egg, beaten
2 cups dry bread crumbs

DIRECTIONS
Heat oil in a large skillet. Dip the shrimp in the egg, then coat the shrimp with bread crumbs. Fry the shrimp in the hot oil.

INGREDIENTS:
1 1/2 pounds boiled shrimp
2 cups milk
1 egg
flour
cornmeal or bread crumbs
1/8 teaspoon salt
dash pepper

PREPARATION:
Mix milk with egg; add shrimp and let stand for 3 minutes. Mix equal parts of flour and cornmeal or bread crumbs with salt and pepper. Coat shrimp well with mixture. Cook shrimp in hot deep fryer at 375° until golden brown.
Drain on paper towels.
Fried shrimp recipe serves 4 to 6

Coconut Battered Shrimp

6 lrg shrimp, tail on peeled and deveined
2 cup Oil
1 tsp Creole Seasoning
1/4 cup Flour
1 x Egg beaten with
2 tbl Water
1 cup Coconut flakes
FOR THE SAUCE
1 tbl Honey
2 tbl Creole mustard

In a deep fat fryer or heavy sauce pan heat oil until a deep fry thermometer registers 360 degrees. Season shrimp with Bayou Blast. Holding the tail of the shrimp, dredge each shrimp in the flour, shake off the excess and then dip into the egg mixture. Be sure to completely coat the shrimp with the egg mixture. Allow the excess egg to drip off of the shrimp. Then dredge the shrimp into the coconut, pressing the coconut securely onto the shrimp. Place the shrimp into the fryer or heavy saute pan, turning as they begin to brown. Remove shrimp when brown on all sides. Drain on paper towels and place on a serving platter.
To make the sauce. in a small bowl mix together the honey and the mustard. Serve with the shrimp.
This recipe yields 2 servings.

Fried Shrimp:
2 dozen medium shrimp, peeled and deveined, tips of the tails left intact
1 cup hot sauce
Vegetable oil, for frying
1 cup all-purpose flour
1 Teaspoon of salt
1 Teaspoon of fresh ground black pepper
1 Teaspoon of cheynne pepper
1 cup masa harina
Lemon wedges, accompaniment

Place the shrimp in a bowl with the hot sauce and toss to coat. Let marinate for 30 minutes.
Preheat a large pot with vegetable oil to come 4 inches up the sides to 375 degrees F.
In a large bowl, combine the flour, masa, and spices, and toss to coat. Add the shrimp in batches, turning to coat evenly, and shaking to remove any excess. Fry in batches in the oil, turning to cook evenly. Cook until golden brown and cooked through, about 3 minutes. Remove and drain on paper towels

this is how i like my shrimp cooked.....................

CRISPY BREADED FRIED SHRIMP

1 lb. fresh raw shrimp
1 egg, slightly beaten
1 tbsp. cornstarch
1/2 tsp. soy sauce
1 tbsp. water
1/4 tsp. salt
Vegetable oil
1/2 c. all-purpose flour
1/2 c. water
3 tbsp. cornstarch
1 tbsp. vegetable oil
1/2 tsp. soda
1/2 tsp. salt

Clean and devein shrimp by cutting down the back of each shrimp and butterfly the shrimp. Mix egg, 1 tablespoon cornstarch, water and soy sauce and 1/4 teaspoon salt. Add shrimp and marinate in refrigerator for 15 minutes. Heat vegetable oil for deep frying. Mix flour, water, 3 tablespoons cornstarch, 1 tablespoon vegetable oil, baking soda, and 1/2 teaspoon salt. Stir shrimp in batter until well coated. Fry 5 to 6 shrimp at a time until golden brown, turning occasionally, 2 to 3 minutes. Drain on paper towels.

There is a box of seafood breading that is sold at the market. You could use that or for a no breading approach try spicing it up by sauteing the shrimp in a pan w/ some garlic & olive oil, then add a can of diced tomatoes, some a italian seasoning and serve over pasta.

I dredge cleaned shrimp in flour, dip in egg, then roll in a mixture of coconut and bread crumps. I fry in deep enough oil on medium high for a few minutes depending on size, then serve with a mixture of orange marmalade and mustard for dipping. You can add pepper or salt if you like but I find this usually has enough flavor by itself.

Flour (or seasoned flour), egg then breadcrumbs. To make it more fluffy like, add some milk or cream to the egg before you put the shrimp in. Deep fry.

Or you can make a tempura batter with flour and cold water (it has to be cold so the flour doesnt ferment) or you could use ice. Fry at a high tempreture. (about 120 degrees)

I like to dip shrimp in a cajun seasoning then into buttermilk then into Panko crumbs, Panko is what they use in Japanese Tampura Crunch, fried in a pan at 350 degrees, turning once
