I got this a long time ago from my mother-in-law (who is now 91) so you know it's an oldy!
Salmon Loaf
1# canned salmon, drained, flaked & bones picked out
1/2 cup mayo
1 can cream of celery soup
1 egg, beaten
1 cup dry bread crumbs
1/2 cup chopped onion
1/2 cup chopped green pepper
1 tsp lemon juice
1 tsp salt
Mix these ingredients together like a meatloaf. Put into a greased loaf pan. Bake at 350 for 1 hour.
Topping
1/2 cup Miracle Whip
1/2 cup sour cream
1/4 cup finely chopped cucumber
Mix these ingredients together and spread on tip.

Ok you got me with the celery soup, BUT, swap-out the dairy for the soup, which now I'm going to try:
Salmon Loaf Supreme With Cucumber Sauce
Ingredients
1 lb poached fresh salmon, flaked
1 or canned equivalent
1/2 c mild cheddar cheese grated
1 egg, beaten
1 tb finely chopped green pepper
1 tb finely chopped onion
1/2 cup sour cream
1/4 c milk
1/2 c cracker crumbs
1/2 tb butter, melted
1/2 tb fresh lemon juice
1/8 ts old bay seasoning
1 pinch of creole seasoning
1/8 ts creamy horseradish
1/2 ts salt
1 cucumber sauce
1 c sour cream
1/2 c cucumber, seeded and chopped
1 thoroughly drained.
2 ts chives finely chopped
3/4 ts dillweed
1 salt and freshly ground
1 white pepper to taste
1 combine all sauce ingredient
1 and chill.
Instructions
Directions. Sauce directions, combine all ingredients and chill
Salmon; Preheat oven to 350 degrees. Blend all ingedients. Place in a buttered 1 1/2 quart loat pan, sprinkle with a few additional cracker crumbs and bake for 50 minutes. Serve with cucumber sauce

Ingredients:
1 can (19 oz.) salmon
1/2 cup fine dry bread crumbs
1 egg
1 can tomato sauce (not spaghetti sauce)
Directions:
Flake salmon, removing the skin and the bones. Add egg, then bread crumbs, to make firm.
Shape into a loaf in a roasting pan. Pour tomato sauce over loaf. Cover. Cook at 350 F to start for 1/2 hr. - then 300 F for 1 hr. Remove from oven. Slice and serve.

A TASTY SALMON LOAF, two versions VERSION ONE: 1# can salmon: juice, bones and all 3/4 - 1 cup bread crumbs 2 egg whites, slightly beaten 1 Tbsp. dry butter buds 3 tsp. Fresh lemon juice 2 dashes Tabasco 1/4 cup finely chopped parsley Salt & freshly ground pepper to taste Mix all together and put in oiled loaf pan. Bake at 375 degrees for 40 - 50 minutes. Let sit 10 minutes before cutting. SERVES 4. VERSION TWO: 1# can salmon: juice, bones and all 4 - 5 pieces whole wheat bread made into fine crumbs 2 eggs 2 Tbsp. dry butter buds 2 Tbsp. Fresh lemon juice 2 dashes Tabasco 1/4 cup finely chopped cilantro 1 can black beans, drained about half 1 Tbsp. finely chopped garlic 1/2 cup finely chopped onion Freshly ground pepper to taste Put eggs, butter buds, lemon juice and black beans into food processor and blend well. Add garlic, onion and cilantro and blend. Dump salmon into large bowl and flake well. Add bean mixture, then bread crumbs, and stir well. This will be very "wet"! Put in well oiled large loaf pan. Bake at 325 degrees for 60 - 75 minutes. Let sit 15 minutes before cutting to firm up, or it won't come out of the pan well at all! 6 GENEROUS SERVINGS. Try either my HERBED CARROTS or POTATOES AND CELERY recipe with this for a great meal. Of course, it would also be good with mushroom slices sautéed in butter mixed in with a can of drained green beans.
