hard to say. A good chicken prepared with a yummy sauce is easy to pair with even yummier side dishes. But sometimes people feel hosts are being skimpy by serving poultry instead of beef. You can still offer a good poultry, just don't substitute chicken where steak is usually used and you won't seem cheap (ie, for kebabs or plain grilled chicken breasts which is a sure loser to grilled steaks.) But a fancy chicken can beat a good steak easily in my opinion.
