I have a friend who one bought himself a cornish hen to prepare for Thanksgivng. Have you ever prepared Thanksgiving or Christmas meal especially for yourself that mimics a traditional holiday, but on a very small scale? If so, what did you make and did you have leftovers?

Oh yeah, we've done that before, I mean the Cornish hens. 1.5 for him, half of one for me. :) We made traditional amounts of stuffing and mashed potatoes because we love them and love the leftovers. Then a veggie of some kind.

Then we save the bones from the hens and make stock for soup.
It's a really cute mini-holiday meal.

I've never done that, but it sounds cute. Have you also looked at mini-foods caterers are serving to their guests. Mini versions of hamburgers, fries, cotton candy, etc.
