i need healthy ways to give brown and white rice some really nice flavor, without fat, trans fat and cholesterol. minimum salt as well.

anyone have any good ideas?

Try the rice cooker, the rice comes out very well, you can cook ad ante or a little done with adjusting the water.
Add 3 cloves , 1 bay leaf, and tsp of ginger garlic paste with 1/2 cup of carrot and peas. Garnish with chopped mint leaves. You will have a tasty (aromatic) rice pilaf.

Here is my recipe, that I learned from my mother, for Armenian Pilaf:

1 Part Vermicelli Noodles (buy in a Middle Eastern store for the best results (they're cheap, less than $1 a pound), but if not available, use capellini or vermicelli broken into short lengths, no more than 2-3 inches)
1 Part Rice
2 Parts Chicken Broth (low-fat, and if you want, low-salt also)

Brown the noodles in a tiny bit of cholesterol-free oil, like canola or olive oil. Once noodles are brown, add rice and broth, mix well, and allow to simmer until most of the liquid is gone. After turning off the heat, cover with a towel for 5 to 10 minutes, then serve!!!

This is a delicious way to have rice. I'm figuring you're not concerned about the carbs in rice since that's what you are asking about, so the carbs in the vermicelli wouldn't be any different.

Something a little different but this adds a nice flavor to the rice.
In frying pan brown 3 Cups of rice in 1 Tablespoon butter and 2 Tablespoon oil. Add in chopped onions or celery** if using. Brown until rice is glassy looking. Add 3 Cups of water or chicken broth to the rice. Cover and cook 20 minutes or until rice is tender.
**can sauté 1 Cup chopped onions and/or 1 Cup chopped celery with the butter and oil.

instead of cooking them in water you can cook them in broths (use fat free low sodium). Use an entire can so that it's much more than you would need. Boil the rice and when it's cooked, drain but then put rice back into the pan and cook off the excess moisture. This will absolutely give it more flavor.

I agree with Slickcut. We use a rice cooker that I bought at CVS for $7.99. We also use chicken or beef broth, depending on the meal. With poultry, I add broccoli which is usually left over from another meal; if we have beef, I add cooked carrot pieces or peas. You can also add all kinds of different spices. Just experiment and enjoy!

Very simple...don't cave and buy a rice cooker...waste of money.

1 part rice, 2 parts water...pinch of salt.

Put everything in pot...stir, bring to a boil, reduce to heat to low, cover and don't touch it for 15 minutes.

Then turn the heat off...let sit for another 5 minutes.

That's it. You like "wetter" rice...add another tablespoon of water...like dryer rice, reduce by one tablespoon.

To add some "healthy" flavor...try citrus zest, fresh herbs, dried chili powder.

Well i use a rice cooker,they are reasonably priced,all you do is add rice,water and salt,turn it on and forget it...You can make chicken and rice.rice with beans...They have cook books on how many ways to serve rice...being from louisana we use rice all the time,its one of our basic foods....

add some ground turmeric (this will make the rice a yellowish colour) or any other spice you like the flavor of.
you can try boiling it in chicken stock instead of just water, this gives a nice flavour.
try adding some vermiccelli...
