i need healthy ways to give brown and white rice some really nice flavor, without fat, trans fat and cholesterol. minimum salt as well.

anyone have any good ideas?

This is shamefully easy. You know what I do, I happen to like Thai food a lot, so I just saute some mushrooms, a lot actually (I get those pre-washed, pre-sliced ones), throw is some rice (cooked) and finally some hot tangy Thai sauce. Cook for another 1-2 min, and done. I might also add some shredded roasted chicken, if I have some in the fridge.This makes my dinner at times when I really don't feel like cooking. And it requires very little oil or salt. The mushrooms and the sauce add a lot of flavor.

For long grain white rice: 1 cup of rice to 1 and 1/4 cups of COLD water. Don't rinse the rice but do give it a quick check for things that don't belong.
Add a pince of salt
You are really advised to add at least a tiny bit - maybe 1/2 tsp - of olive, sunflower or peanut oil. It keeps it from becoming all sticky like glue.
Give it a quick stir to disperse the oil onto the rice.
Set the burner to high with the lid on. Don't stir it.
When the mixture is boiling (not just bubbling) take it off the burner and move it to one that is off. Give the mixture a quick (<3 seconds) stir.
LEAVE IT ALONE with the lid on for at least 20 minutes. Don't open the lid. Don't stir it. Don't touch it. Leave it.
The best part is that you can forget about it while you do other stuff. 20 min or even one hour later it is still good.
Give it a quick fluffing with a spoon and you're ready to go.

For more interesting flavors, before cooking add any or all of:
Garlic powder (1/4 tsp)
Parsley (1/4 to 1/2 tsp)
Black Pepper (1/4 tsp)
Or all at once 1 tsp of Steak Spice or something like Mrs. Dash.

Lots of people NEVER figure out rice but once you do you'll be happy.

I have had less success with brown rice.....

try low sodium 99% fat free chicken stock it really helps
and also try jasmine rice for flavor

For brown rice, which is disgusting when you just use plain water, I use chicken broth. There is low sodium broth. Tastes much better.
