I am allergic to all types of poultry, and the only seafood that I like is shrimp. I am trying to diet, but do not know what to substitute for the poultry and fish.

If it's low fat meat you want there ARE low-fat cuts of beef like eye of round, which is almost as low as chicken.
Some cuts of pork are very low too.
Bison (although expensive and not always available) is about the same as chicken. It is like beef in consistency but a bit of a stronger flavor, like lamb.

I use very lean top sirloin and also tofu. Not that "silken" stuff. The firmer, textured tofu. I use it in almost everything in place of the called-for meat. Tofu will absorbe the flavors of the dish. If you like Asian food, I suggest trying tofu in one of Annie Chun's meal kits. You can get them in most grocery stores. I dice it and stir-fry it quickly, add the rest of the ingredients and it's REALLY good. And healthy.

buffalo meat, its a little tougher and saltier than beef but its far far healthier. Its also not that easy to find but in the country even tesco's stock it.

I have actually seen shows where they say Ostrich meat is very low in fat.
