Butter is the fat in milk.In the old days you just put full fat milk in a containter with a narrow neck, cover tightly, then shake it up for quite a while, the butter just collects around the mouth of the containter, all ready to clog up your poor arteries.

It is made from cream which when whipped turns into butter. You can make this very easy at home by taking heavy whipping cream and beating it and see it turn into butter before your very eyes.

Take pasteurised whole milk......you put it in a jar ..put the lid on and shake it for a while and it clumps up.....you pour off the whey water and lightly salt what is left...there you have butter.
To make ricotta cheese you get a gallon of whole milk ...bring it to a simmer....add 1 cup vinegar...stir 1 x ...and pour into a collander..let the whey water drip.....if you have smaller molds use them if not what you have is cheese. Lightly salt and spread on toast or use it in your lasagna.

cream. you can whip some into butter if you want.
and i still think butter (in moderation, of course) is better for you than margarine. margarine is, like, one molecule from plastic. if you put an open container of margarine in, say, a barn and leave it, no critters will touch it. what does that tell you? it tastes better too.

pure cream. it is strained off the top of the milk, and churned to turn it into a solid. used to make it with my sister every morning after grand-dad milked the cows. after it solidifies, it is put into molds and refrigerated.
