Rum balls! They are soo easy. I've actually just been making them myself, although I substituted strawberry liqueur for the rum (hubby drank it all!) and omitted the cocoa in the batch I just made so that I had some white ones. Here's the recipe I use 1 tin sweetened condensed milk 1 packet milk arrowroot biscuits (if in America use Graham crackers or whatever they are called) 1 cup of dessicated coconut 2 tablespoons cocoa (or half a block of chocolate, melted) 2 tablespoons rum (can be omitted or substituted for) extra coconut or sprinkles for rolling crush the biscuits and place in a bowl. add the rest of the ingredients, mix together and roll into balls. roll the balls in coconut and refrigerate for a couple of hours (or not if you're like me and eat them!) I'm a bit tipsy at the moment- I drank the rest of the bottle of strawberry liqueur that I substituted for the rum! Thankfully it's only a small bottle so I won't get a hangover from it!

Divinity Recipe
2 2/3 C. sugar
2/3 C. light corn syrup
1/2 C. water
2 egg whites
1 t. vanilla
2/3 C. coarsely chopped nut
Cook sugar, corn syrup and water (use 1 tablespoon less water on humid days) in 2-quart saucepan over low heat, stirring constantly, until sugar is dissolved. Continue cooking, without stirring, to 260° F. on candy thermometer or until small amount of mixture dropped into very cold water forms a hard ball that holds its shape but is pliable.
Beat egg whites in medium bowl with electric mixer on high speed until stiff peaks form. Continue beating while pouring hot syrup in a thin stream into egg whites, beating constantly on medium speed. (For best results, use electric stand mixer, not a portable handheld mixer since beating time is about 10 minutes and mixture is thick.) Add vanilla. Beat until mixture holds its shape and becomes slightly dull. (Mixture may become too stiff for mixer.) Gently stir in nuts.
Drop mixture from buttered spoon onto waxed paper. Let stand at room temperature at least 12 hours, turning candies over once, until candies feel firm. Store in airtight container.

I made some toffee. It wasn't hard
1 cup sugar
1 cup butter
1/4 cup water
1/2 cup chocolate chips
1/2 cup chopped nuts
put butter sugar and water in saucepan and bring slowly to a boil. reduce heat to medium and cook for 13 minutes or to 300 degrees on candy thermometer
pour hot candy on a baking sheet and sprinkle with chocolate chips. when chips are melted spread them around like frosting
top with chopped nuts. let cool 1 hour and break apart

I always make choc truffle which are really easy and very chocolaty. You'll need icing sugar, butter, and milk and/or dark chocolate. Then either coco powder, sprinkles, or chopped nuts to cover. I don't have any measuremnet though as i just chuck everything in a bowl together......sorry! Mix icing sugar, butter and melted choc together until the mix is thick enough to roll into balls, then dip these in melted choc and roll in coco powder etc. Pop them in the fridge for a few hours and then they're ready.

Here is my favorite recipe:
Double layer fudge
For peanut butter layer:
2 pkgs. Peanut butter chips
14 oz. Can sweetened condensed milk
4 T. butter
Melt all ingredients in saucepan stirring frequently. Take off heat and add 1 C. chopped peanuts if desired. Spread into 9x13 foil lined pan. Chill in refrigerator while making second layer.
For chocolate layer:
1 bag milk chocolate chips
14 oz. Can sweetened condensed milk
1 tsp. Vanilla
Melt chips and milk together in saucepan until smooth. Take off heat and stir in vanilla. Spread on top of peanut butter layer and chill several hours. Cut into squares.
If you are looking for something really simple here is another one:
Quick Fudge
1 package semi sweet chocolate chips (12 oz.)
1 1/2 Cups Mini Marshmallows
1 can Chocolate Frosting
Melt chocolate chips and marshmallows in large microwave safe bowl. Stir until well blended. Add in chocolate frosting and pour into greased baking dish or dish lined with tin foil. You can add chopped nuts or chopped candies on top if desired. Chill for several hours until hard. Cut into small squares.
