Because now people are more reluctant to accept what they do not feel comfortable with or what they do not do themselves!
Islamic system of veiling has been in this world forever...and it's a order from Allah not from men!
Muslim mens are not to be blamed!
Allah (SWT) has ordered us Muslim women to cover ourselves to protect ourselves from the harms of this world (illegal intercources, dating, exposing in front of strange men, etc.).
And those who claim that they feel uneasy conversing with a niqabi might feel that way because they are not used to it but communication is not the problem!
You can hear a veiled person perfectly!
If a Muslimah speaks low, it's not because of the veil but it's because that's the way she talks!
There are women and girls who do not talk loud and people have hard time hearing them even though they are not covered!
We cannot bring weak excuses in front of Allah's Orders!
He is our Lord and we are His slaves!
We are here to worship Him!

First of all, sunflower, hijab is not the Islamic veil, like you quaintly put it, that's niqab.
Hijab is the scarf worn modestly covering the hair.
Nobody has any problems with the hijab.
However, the niqab and burqa or the veil and the long head to toe gown worn by some Muslims is what has become the center of controversy.
Again, nobody is telling them that they may not wear it at all. That's their business whether or not they wear it.
The issue is that they need to show their faces for verification, at the passport checking in the Immigrations at the airport, and also at the ATMs and Security areas. This is what the Muslims objected to and the Authorities stood firm about telling them that if they did not want to go through the formalities, they would not be allowed inside these places.
You might note that we cannot wear a helmet, cap or hat in these same places and we do not object to it.
The Muslims have been told that if they want to wear these things, then they are free to do so outside, but not inside the Security areas. They want us to change the rules for them only, which we don't agree to.
Also, Shopping Malls will not allow these people in there with those robes because too many of them were found to be indulging in shop lifting.
Again, like I said, we do not think it's our business to tell them how they should dress, but they need to follow the rules of Security or stay away from those places.
Choice is thiers.

Al Salaam Sunflower, I know its really sad how people get bothered so easily... I dont get bothered watching nuns pass by, dressed up modestly and their hair under scarf... Infact I admire them with respect.. So, why the difference and change in tone towards Muslim women in hijab... maybe they get intimidated by the respect it commands and the dignity that reflects on the face... quiet hard for anyone to achieve this right...

Because it's a symbol of hypocrisy.
There is no freedom at all. If you have a beautiful silky long hair, why would you cover it with hijab? And why would you think that by wearing hijab and showing off to others will make you holy and go to Heaven? :)
People just don't understand why in Islam there is a rule for women to cover all over their bodies while they are sometimes beautiful. Neither do I.

It does not bother me but I heard it said that the fact that the face and facial expressions cannot be readily detected, it is considered a mask that is hidden behind. Sort of a hiding place for the true reasoning behind someone's activities if you will.

I honestly have no idea. The people who say, "Who knows what they are hiding under that thing" do not usually advocate going around naked. Why not? Who knows what one could be hiding under those clothes! And they don't protest about people wearing scarves in the winter. So they are really just prejudiced I think.

It only "bothers" me if I am trying to have a direct face to face consversation with another. In some cases, they have removed the veil to briefly converse.

We tend in the West to think that our way is the best way and that any other way is wrong or inferior. It bothers many people because it reminds them that there is a world outside their own.

It bothers me because don't Islamic women wear them for modesty. Those Islamic men must have absolutely no self control to keep their women completely covered. Do Islamic women think they are better because they do wear one.
