Break about 2-3 eggs (depending on the size of omelet you want). Mix them so the egg white and yolk mix. Add salt and pepper to meet your taste.
Put in a pammed frying pan. Add any ingredients you want... cheese, bacon pieces, mushrooms, onions, etc.
Let the omelet just sit in the pan until the edges start to crisp. Then fold over so it makes a half-moon shape.
Cook for a few minutes more... tip the pan so it falls out on a plate, and eat!
Note: one of my favorite kinds is: egg, swiss cheese, potato chunks and chives. Yum!

1 For each omelet, beat together 2 large Judy's Family Farms fresh eggs and 2 tablespoons of water.
2 In 7-10" omelet pan or skillet, over medium heat, heat 1 tablespoon butter or margarine until just hot enough to sizzle a drop of water. Pour in egg mixture. Mixture should set immediately at edges.
3 With an inverted pancake turner, carefully push cooked portions at edges toward center so uncooked portions can reach hot pan surface.
4 While drawing cooked portions toward center, tilt pan and move cooked portions as necessary.
5 While top is still moist and creamy-looking, spoon about to 1 cup filling on one side of omelet. With pancake turner, fold unfilled side of omelet over filling. Don't worry if it tears. When flipped onto plate, tears won't be visible.
6 Slide omelet from pan onto plate or invert onto plate with a quick flip of the wrist.

I have 2 things to add to these wonderful recipes first I did this when I made several omelets for saving time & I liked the way they turned out. The eggs milk salt & pepper , I put in a blender to mix. they come out more fluffy. next i like to turn the omelet over after cooking in the pan then put in whatever ingredients I like I have found If you just fold then the egg in the middle is not cooked. I prefer not to have the raw egg. & have a great weekend

Italian Style Omelette recipe
ingredients
25 g butter
6 medium size eggs, beaten
salt and freshly ground black pepper
100 g Italian grated cheese
50 g sundried tomatoes, roughly chopped
1/2 x 15 g pack fresh basil, leaves removed from the stem
1 tsp dried Provence herbs
method
1. Heat 15 g butter in a 20 cm non stick frying pan until foaming.
2. Pour in half the seasoned beaten egg mixture, mixing with a fork for even distribution.
3. Cook quickly, drawing in the edges with a fork to allow uncooked egg to run underneath.
4. Fill with 1/2 the cheese, tomato, basil leaves and a sprinkling of dried herbs.
5. Tilt the pan and fold the omelette over towards one side of the pan, pushing it with the fork to help fold it.
6. Put to one side to keep warm whilst repeating the process again for the remaining ingredients.

I agree with the 1st answer too... but if you want something a little different too... try this brunch pizza... it's an omelet with a crescent crust twist!
Western Brunch Pizza
1 package (4 oz) refrigerated crescent rolls
1 egg lightly beaten
2 oz diced deli ham (¼ cup)
¼ cup diced green bell pepper or poblano pepper
1 Tbsp thinly sliced green onion with top
½ cup (2 oz) shredded Colby & Monterey Jack cheese blend
2 Tbsp diced plum tomato
Salt and ground black pepper (optional)
1.Preheat oven to 375ºF. Unroll crescent dough; separate into two rectangles. Arrange rectangles edge to edge on lightly floured Small Round Stone to form a square. Using a lightly floured Baker’s Roller, roll dough within 1 inch of edge of stone. Fold in ½ inch of edge of dough to create rim.
2.In Small Batter Bowl, whisk egg using Stainless Mini Whisk. Sprinkle ham, bell pepper and green onion evenly over dough; drizzle egg evenly over pizza. Sprinkle with cheese. Bake 12-15 minutes or until crust is golden brown and filling is set in the center.
3.Remove from oven. Sprinkle with tomato; season with salt and black pepper, if desired. Slice into wedges using Pizza Cutter. Serve warm.

I find that whisking in some milk helps to bind the egg so it doesnt break up...also, make sure that the pan is hot before you put the egg in...some cream cheese in addition to the filling makes it scrumptious...mmm I'm hungry now
